技术领域
本发明涉及一种保健鸡肉,尤其涉及一种奶油米粉鸡肉肠及其制备方法。
背景技术
鸡肉中蛋白质的含量较高,易消化,鸡肉对营养不良、畏寒怕冷、乏力疲劳等症有很好的食疗作用。中医认为,鸡肉有温中益气、补虚填精、健脾胃、活血脉、强筋骨的功效。而将鸡肉中添加有营养的新鲜蔬菜、膳食纤维、蛋白等物质就更能使其营养成分高,但同时也很美味,送酥爽口。随着人们生活条件的改善,鸡肉及其料理品在餐桌以外的地方越来越常见,但是出现在市场上的种类很少,然而随着人们生活水平的提高,市场上单一的即食肉食品并不能满足人们的生活需求,且营养也是单一的,如何获得高营养且具有一定的养生保健的鸡肉产品正在成为主题。
发明内容
本发明克服了现有技术中的不足,提供了一种奶油米粉鸡肉肠及其制备方法。
本发明是通过以下技术方案实现的:
一种奶油米粉鸡肉肠,由下列重量份的原料制成:
鸡肉30-40、营养添加剂1-2、莲子粉14-15、咖啡粉6-7、鱿鱼干13-14、豆腐乳2-3、西米粉5-7、鱼油2-3、冬菇8-10、奶油1-2、冰片1-2.8、赤芍1.7-2、酢浆草1.9-2.3、乌药2-2.2、桑黄1.6-2、淡竹叶2.4-2.8、石斛花1.3-1.8、核桃衣2-3、杨梅8-9;
所述营养添加剂由下列重量份原料制成:
红参1-1.4、槭叶草1.2-1.8、使君子1-1.4、柿蒂1-2、牛肉9-12、辣椒油1.8-2.2、猪油2.8-3.8、香肠6-9;
制备方法为:(1)将红参、槭叶草、使君子、柿蒂用7-9倍量的水浸提后浓缩,经喷雾干燥,得中药粉;
(2)香肠隔水蒸熟剁碎,拌入辣椒油、猪油混合搅拌均匀,置于冰箱中冷藏10-15分钟,取出冰箱内物料,经灌肠排气,做得油肠,在油肠表面均匀划有长条开口,入盘待用;
(3)牛肉洗净,切长条形薄片,拌入中药粉,取牛肉片将油肠螺旋状包覆,并用稻草固定,将做好的牛肉卷置于烤炉上烘烤8-10分钟,取出晾凉,收取牛肉片,烘干磨粉,即得。
所述的一种奶油米粉鸡肉肠的制备方法,包括以下步骤:
(1)将赤芍、酢浆草、乌药、桑黄、淡竹叶、石斛花用6-9倍量的水浸提后浓缩,滤得滤液,得中药汁;
(2)鸡肉切片,用擀面杖捶打至松软,豆腐乳捣成泥状,拌入核桃衣、莲子粉,混合均匀后涂抹于鸡肉片上,共同送入油锅煎炸2-3分钟,取出沥干油待用;
(3)鱿鱼干,倒入咖啡粉、冰片以及少量水混合浸煮,取处理好的鱿鱼干,与杨梅混合切成碎粒状,并摊开晾凉,刷上一层奶油后,共同置于烘箱中烘烤6-8分钟,取出待用;
(4)冬菇洗净切丝,鱼油入锅烧热,倒入冬菇丝,混合翻炒4-6分钟,取出冬菇丝,沥干油待用;
(5)将步骤(2)(3)(4)所得物料以及除中药汁外的剩余物料混合均匀,经灌肠排气,做得鸡肉肠,将鸡肉肠置于中药汁中浸煮20-25分钟,再取出烘干包装,即得产品。
本发明的优点是:
本发明配方增加咖啡粉、鱿鱼干、冬菇等成分,具有丰富的营养,有益健康,同时添加中药成分,如桑黄、石斛花,可以理气安神、益气活血、和胃止泻,本发明鸡肉肠香味醇厚,口感独特,有益健康,是老少皆宜的食品。
具体实施方式
下面结合实施例对本发明作进一步详细描述:
实施例1:
一种奶油米粉鸡肉肠,由下列重量份(斤)的原料制成:
鸡肉40、营养添加剂2、莲子粉15、咖啡粉6、鱿鱼干14、豆腐乳3、西米粉7、鱼油3、冬菇10、奶油2、冰片2.8、赤芍1.7、酢浆草2.3、乌药2.2、桑黄2、淡竹叶2.8、石斛花1.8、核桃衣3、杨梅9;
所述营养添加剂由下列重量份原料制成:
红参1.2、槭叶草1.3、使君子1、柿蒂1、牛肉10、辣椒油1.8、猪油3、香肠7;
制备方法为:(1)将红参、槭叶草、使君子、柿蒂用7倍量的水浸提后浓缩,经喷雾干燥,得中药粉;
(2)香肠隔水蒸熟剁碎,拌入辣椒油、猪油混合搅拌均匀,置于冰箱中冷藏10分钟,取出冰箱内物料,经灌肠排气,做得油肠,在油肠表面均匀划有长条开口,入盘待用;
(3)牛肉洗净,切长条形薄片,拌入中药粉,取牛肉片将油肠螺旋状包覆,并用稻草固定,将做好的牛肉卷置于烤炉上烘烤8分钟,取出晾凉,收取牛肉片,烘干磨粉,即得。

(2)鸡肉切片,用擀面杖捶打至松软,豆腐乳捣成泥状,拌入核桃衣、莲子粉,混合均匀后涂抹于鸡肉片上,共同送入油锅煎炸3分钟,取出沥干油待用;
(3)鱿鱼干,倒入咖啡粉、冰片以及少量水混合浸煮,取处理好的鱿鱼干,与杨梅混合切成碎粒状,并摊开晾凉,刷上一层奶油后,共同置于烘箱中烘烤6-8分钟,取出待用;
(4)冬菇洗净切丝,鱼油入锅烧热,倒入冬菇丝,混合翻炒6分钟,取出冬菇丝,沥干油待用;
(5)将步骤(2)(3)(4)所得物料以及除中药汁外的剩余物料混合均匀,经灌肠排气,做得鸡肉肠,将鸡肉肠置于中药汁中浸煮25分钟,再取出烘干包装,即得产品。

1.一种奶油米粉鸡肉肠,其特征在于由下列重量份的原料制成:
鸡肉30-40、营养添加剂1-2、莲子粉14-15、咖啡粉6-7、鱿鱼干13-14、豆腐乳2-3、西米粉5-7、鱼油2-3、冬菇8-10、奶油1-2、冰片1-2.8、赤芍1.7-2、酢浆草1.9-2.3、乌药2-2.2、桑黄1.6-2、淡竹叶2.4-2.8、石斛花1.3-1.8、核桃衣2-3、杨梅8-9;
所述营养添加剂由下列重量份原料制成:
红参1-1.4、槭叶草1.2-1.8、使君子1-1.4、柿蒂1-2、牛肉9-12、辣椒油1.8-2.2、猪油2.8-3.8、香肠6-9;
制备方法为:(1)将红参、槭叶草、使君子、柿蒂用7-9倍量的水浸提后浓缩,经喷雾干燥,得中药粉;
(2)香肠隔水蒸熟剁碎,拌入辣椒油、猪油混合搅拌均匀,置于冰箱中冷藏10-15分钟,取出冰箱内物料,经灌肠排气,做得油肠,在油肠表面均匀划有长条开口,入盘待用;

2.根据权利要求1所述的一种奶油米粉鸡肉肠的制备方法,其特征在于包括以下步骤:
(1)将赤芍、酢浆草、乌药、桑黄、淡竹叶、石斛花用6-9倍量的水浸提后浓缩,滤得滤液,得中药汁;
(2)鸡肉切片,用擀面杖捶打至松软,豆腐乳捣成泥状,拌入核桃衣、莲子粉,混合均匀后涂抹于鸡肉片上,共同送入油锅煎炸2-3分钟,取出沥干油待用;
(3)鱿鱼干,倒入咖啡粉、冰片以及少量水混合浸煮,取处理好的鱿鱼干,与杨梅混合切成碎粒状,并摊开晾凉,刷上一层奶油后,共同置于烘箱中烘烤6-8分钟,取出待用;
(4)冬菇洗净切丝,鱼油入锅烧热,倒入冬菇丝,混合翻炒4-6分钟,取出冬菇丝,沥干油待用;
(5)将步骤(2)(3)(4)所得物料以及除中药汁外的剩余物料混合均匀,经灌肠排气,做得鸡肉肠,将鸡肉肠置于中药汁中浸煮20-25分钟,再取出烘干包装,即得产品。
