一种大麦香风味鸭掌,其特征在于由以下重量份的原料制成:鸭掌300~340、炒大麦20~25、炒制咖啡豆8~12、茉莉花茶5~7、鱿鱼12~15、杏仁粉4~6、红辣椒6~8、甜酒10~12、食用盐14~18、味精2~3、玉米粒4~6、川贝4~6、菠萝皮3~5、苹果叶4~5、助剂4~5和适量的水;本发明的鸭掌是一种大麦香性的风味鸭掌,与其说是一种菜肴,本发明更像是一种茶余饭后开胃、充饥和打发时间的零食,它是将鸭掌卤制过后再放入蒸笼中熏蒸,不同的是用于产生蒸汽的沸水混合了炒大麦、炒咖啡豆和茉莉花,这几种可以制茶的醇香口味原料,使得煮沸后产生的气味在高温的条件下渗透至先前卤制的鸭掌中,别有风味,口感醇香而无油腻感。

[0002] 大麦茶是中国、日本、韩国等民间广泛流传的一种传统清凉饮料,把大麦炒制成焦 黄,食用前,只需要用热水冲泡2〜3分钟就可浸出浓郁的香茶。大麦茶是将大麦炒制后再 经过沸煮而得,闻之有一股浓浓的麦香,喝大麦茶不但能开胃,还可以助消化,还有减肥的 作用。
[0003] 据《本草纲目》记载:"大麦味甘、性平、有去食疗胀、消积进食、平胃止渴、消暑除 热、益气调中、宽胸大气、补虚劣、壮血脉、益颜色、实五脏、化谷食之功。治小便淋痛;治麦 芒入目;治老人烦渴不止、饮水不定、舌卷干焦;治水气病;夏季清暑热;治急性咽喉炎、 扁桃体炎、咽喉部脓肿。大麦面粉可以食用,大麦还可以制成啤酒,帮助消化,疏肝利气,帮 助调整肠胃功能的功效。

[0006] -种大麦香风味鸭掌,其特征在于由以下重量份的原料制成:鸭掌300~340、炒大 麦2(Γ25、炒制咖啡豆8〜12、茉莉花茶5〜7、鱿鱼12〜15、杏仁粉4飞、红辣椒6〜8、甜酒1(Γ12、 食用盐1Γ18、味精2〜3、玉米粒4飞、川贝4飞、菠萝皮:Γ5、苹果叶Γ5、助剂4飞和适量 的水;所述助剂由以下重量份的原料制成:菱角茎3~5、地骨皮6~8、蒲公英18~20、肉苁蓉 5〜7、乌梅核1(Γ12、菠萝皮疒9、枸杞子2〜3、辣椒叶3〜5、玫瑰花苞6〜8、香芋粉20〜25、橄榄 果肉15~18和适量的水;制备方法是:(1)将生甘草的根去皮后混合橄榄果肉,磨制匀浆; (2)混合菱角茎、地骨皮、肉苁蓉、乌梅核、菠萝皮、枸杞子、辣椒叶和玫瑰花苞,加水至液面 高出物料6~8cm,煎煮并熬制5(T70min至汤汁浓稠,过滤汤汁;(3)混合(1)的匀浆和(2) 的汤汁,加入香芋粉调匀,之后烘干后粉碎即得。

1. 一种大麦香风味鸭掌,其特征在于由以下重量份的原料制成:鸭掌30(Γ340、炒大麦 2(Γ25、炒制咖啡豆8〜12、茉莉花茶5〜7、鱿鱼12〜15、杏仁粉4飞、红辣椒6〜8、甜酒1(Γ12、食 用盐1Γ18、味精2〜3、玉米粒4飞、川贝4飞、菠萝皮3、、苹果叶Γ5、助剂4飞和适量的水; 所述助剂由以下重量份的原料制成:菱角茎3~5、地骨皮6~8、蒲公英18~20、肉苁蓉5~7、 乌梅核1(Γ12、菠萝皮疒9、枸杞子2~3、辣椒叶3~5、玫瑰花苞6~8、香芋粉20~25、橄榄果肉 15~18和适量的水;制备方法是:(1)将生甘草的根去皮后混合橄榄果肉,磨制匀浆;(2)混 合菱角茎、地骨皮、肉苁蓉、乌梅核、菠萝皮、枸杞子、辣椒叶和玫瑰花苞,加水至液面高出物 料6~8cm,煎煮并熬制5(T70min至汤汁浓稠,过滤汤汁;(3)混合(1)的匀浆和(2)的汤汁, 加入香芋粉调匀,之后烘干后粉碎即得。
