一种蔬菜防癌薯条及其制备方法,其特征在于由下列重量份的原料制成:红薯500-550、绞股蓝3-4、薰衣草2-3、三七花4-5、人参花2-3.5、葛花4-5、勒管草2-3、狗骨柴3-4、芦荟3-4、马齿苋2-3、番茄2-3、茄子3-4、海参15-18、腰果8-9、啤酒25-30、小麦粉50-60、营养添加剂3-4。本发明所使用的主要原料红薯中含有丰富的β-胡萝卜素、维生素C、叶酸和膳食纤维,其中β-胡萝卜素和维生素C的抗氧化作用有助于抵抗氧化应激对遗传物质脱氧核糖核酸的损伤,起一定的抗癌作用,而膳食纤维预防结肠直肠癌,同时,本发明搭配使用的番茄、茄子等蔬菜及绞股蓝等中草药可预防癌症。

本发明属于食品加工技术领域,涉及一种薯条,尤其涉及一种蔬菜防癌薯条及其制备方法。
背景技术
薯条是一种广受人们欢迎的休闲食品。现在市场上薯条的口味种类繁多,其多是使用味精和不同香料进行调味。但是这种薯条营养成分单一,不具有保健功效。
发明内容
本发明的目的是提供一种蔬菜防癌薯条及其制备方法,本发明具有口感好,营养健康的特点。
本发明所采用的技术方案是:
一种蔬菜防癌薯条,其特征在于由下列重量份的原料制成:
红薯500-550、绞股蓝3-4、薰衣草2-3、三七花4-5、人参花2-3.5、葛花4-5、勒管草2-3、狗骨柴3-4、芦荟3-4、马齿苋2-3、番茄2-3、茄子3-4、海参15-18、腰果8-9、啤酒25-30、小麦粉50-60、营养添加剂3-4;
所述营养添加剂由下列重量份原料制成:丝瓜络1-1.2、苹果花0.8-1、罗汉果1.1-1.2、菟丝子0.6-0.8、蜂蜜1-2、绿豆5-6、阿胶2-3、米醋4-5;
制备方法为:(1)将绿豆加4-5倍的水打浆,过滤除渣,收集滤液;将丝瓜络、苹果花、罗汉果、菟丝子加滤液密封浸泡7-8小时,过滤除渣,得保健绿豆浆;
(2)将阿胶加米醋隔水大火蒸至阿胶完全融化,然后将所得物料与保健绿豆浆合并,加入剩余物料,小火加热搅拌,熬成膏状,烘干后研成粉末,即得。
所述的蔬菜防癌薯条的制备方法,其特征在于包括以下步骤:
(1)将绞股蓝、薰衣草、三七花、人参花、葛花、勒管草、狗骨柴加6-7倍的水文火煎煮40-50分钟,过滤除渣,得药液;
(2)将腰果送入锅中,小火炒香后出料,加药液研磨匀质,得腰果浆;
(3)将海参加啤酒浸泡28-30小时后取出,剖腹去肠杂、腹膜后切片,与腰果浆混合入锅,小火焖煮40-50分钟后出锅,过滤除渣,收集滤液;
(4)取芦荟、番茄、茄子果肉与马齿苋混合打浆,过滤除渣,所得果蔬汁与小麦粉混合入锅,小火炒制10-12分钟后出料;
(5)将红薯去皮,送入蒸锅,大火蒸熟后取出,打成泥,然后与步骤(3)、(4)所得物料及剩余物料混合拌匀,送入模具中,压实后脱模、切条、晒干,即得。
本发明中的勒管草为荨麻科植物假楼梯草的全草,狗骨柴为双子叶植物药茜草科植物狗骨柴的根。
本发明的有益效果为:
本发明所使用的主要原料红薯中含有丰富的β-胡萝卜素、维生素C、叶酸和膳食纤维,其中β-胡萝卜素和维生素C的抗氧化作用有助于抵抗氧化应激对遗传物质脱氧核糖核酸的损伤,起一定的抗癌作用,而膳食纤维预防结肠直肠癌,同时,本发明搭配使用的番茄、茄子等蔬菜及绞股蓝等中草药可预防癌症,此外,本发明制备工艺简单,易推广,具有显著的经济效益。
具体实施方式
一种蔬菜防癌薯条,其特征在于由下列重量份(公斤)的原料制成:
红薯500、绞股蓝3、薰衣草3、三七花5、人参花3.5、葛花5、勒管草3、狗骨柴3、芦荟4、马齿苋3、番茄3、茄子4、海参18、腰果9、啤酒30、小麦粉50、营养添加剂4;
所述营养添加剂由下列重量份(公斤)原料制成:丝瓜络1.2、苹果花0.8、罗汉果1.2、菟丝子0.8、蜂蜜2、绿豆6、阿胶2、米醋5;
制备方法为:(1)将绿豆加4-5倍的水打浆,过滤除渣,收集滤液;将丝瓜络、苹果花、罗汉果、菟丝子加滤液密封浸泡7-8小时,过滤除渣,得保健绿豆浆;
(2)将阿胶加米醋隔水大火蒸至阿胶完全融化,然后将所得物料与保健绿豆浆合并,加入剩余物料,小火加热搅拌,熬成膏状,烘干后研成粉末,即得。
