[0030]本发明的优点是:加工方法简单、易操作,产品口感软、糯、弹,而且本发明的馅料通过将馅料压模成块,使包裹工艺易于工业化生产,成品形状好。通过在馅料内加入麻糌粒,使馅料口感软、糯、弹。加入的荸荠可以使馅料易于压模成型。虱目鱼肉口感鲜嫩、营养丰富,含有多种不饱和脂肪酸,特别是EPA和DHA。虱目鱼为海鱼,在大陆淡水养殖成功。由于淡水养殖鱼类不适合冷冻销售,而虱目鱼上市期集中,因此常常因为大量积压而造成虱目鱼腐烂变臭。本发明通过开发虱目鱼新产品,成功地扩大了虱目鱼的销路,提高了虱目鱼的附加值。

Claims (4)
1.一种虱目鱼肉卷,用春卷皮包裹馅料条,所述馅料条由虱目鱼肉丁30〜40%、虱目鱼肉糜30〜40%、荸荠粒10〜20%,麻糌粒8〜12%制成,所述虱目鱼肉糜中含0.2〜0.4%多聚磷酸盐、I〜3%茶多酚、2〜4%氯化钠,所述虱目鱼肉丁用包括0.2〜0.4%多聚磷酸盐、2〜5 %醋、2〜4 %姜汁、I〜3 %胡椒粉、I〜3 %月桂叶、I〜3 %茶多酚的腌泡汁腌渍,其中,I〜3%茶多酚可用0.5〜2%维生素C替代。
2.如权利要求1所述的虱目鱼肉卷,其特征是:所述腌泡汁中包括0.5〜2%β-环糊精。
3.如权利要求1〜2之一所述的虱目鱼肉卷,其特征在于:所述虱目鱼肉糜中含3〜6%大豆蛋白、2〜4%蛋清、2〜4%明胶、I〜3%芝士。
4.如权利要求1所述的虱目鱼肉卷的加工方法,包括原料准备和产品制作工序,其中 (1)原料准备 I.虱目鱼肉丁:将虱目鱼清洗干净,取腹部肉切成丁,用腌泡汁浸泡; II.荸荠粒:将荸荠洗净、削皮、斩碎,并添加柠檬酸和/或维生素C; (2)产品制作 a.原料混合:将虱目鱼肉丁、虱目鱼肉糜、荸荠粒、麻糌粒混合成馅料; b.压模:所述馅料压模成条; c.速冻:将所述馅料条速冻成型,然后脱模,制成馅料条; d.裹料:用春卷皮包裹所述速冻成型的馅料条。
