Abstract
本发明公开了一种开胃消食糯米锅巴及其制备方法,其由下列重量份的原料制成:糯米30-40、西米淀粉3-5、木薯淀粉2-4、瓜蒌籽油0.5-1.5、山楂核粉2-3、红萝卜籽粉1-3、薏仁粉1-2、五香粉3-4、陈皮2-3、鸡内金1-3、桂圆壳1-2、麦芽2-3、太子参3-4、荜茇根2-3、蚕豆壳1-2、刺梨根1-2、豆蔻花2-3、山楂叶1-3。本发明采用荜茇根、蚕豆壳、刺梨根、豆蔻花、山楂叶等中草药的浸提液蒸煮糯米,而上述所用中草药均具有开胃消食功效,蒸煮过程中,糯米可以充分吸收中草药的有效成分,然后又将蒸熟的糯米与具有开胃消食功效的瓜蒌籽油、山楂核粉等混合制得糯米锅巴,可以大大强化锅巴的开胃消食功效。

技术领域
本发明涉及一种开胃消食糯米锅巴及其制备方法,属于食品加工技术领域。
背景技术
锅巴酥脆可口,是老少皆宜的一种小食品,通常锅巴是以优质大米为原料,经蒸煮、压制、油炸、撒调料等工序制作而成。根据原料以及加入调料的不同,又可制作成多种口味,如孜然味、麻辣味、牛肉味、五香味锅巴等。虽然现有的锅巴种类繁多,但是其开胃消食功效却不明显,甚至无此功效。
发明内容
本发明的目的在于,针对现有技术的不足,提供一种具有显著开胃消食功效的糯米锅巴及其制备方法。
本发明采用的技术方案如下:
一种开胃消食糯米锅巴,由下列重量份的原料制成:糯米 30-40、西米淀粉 3-5、木薯淀粉 2-4、瓜蒌籽油0.5-1.5、山楂核粉 2-3、红萝卜籽粉1-3、薏仁粉1-2、五香粉 3-4、陈皮2-3、鸡内金1-3、桂圆壳1-2、麦芽2-3、太子参3-4、荜茇根2-3、蚕豆壳1-2、刺梨根1-2、豆蔻花2-3、山楂叶1-3。
优选地,一种开胃消食糯米锅巴,由下列重量份的原料制成:糯米 30、西米淀粉 3、木薯淀粉 3、瓜蒌籽油1、山楂核粉 2、红萝卜籽粉2、薏仁粉1.5、五香粉 3、陈皮2、鸡内金2、桂圆壳1、麦芽2、太子参3、荜茇根2、蚕豆壳1.5、刺梨根1、豆蔻花2、山楂叶1。
一种开胃消食糯米锅巴的制备方法,包括以下步骤:
(1)将陈皮、鸡内金、桂圆壳、麦芽、太子参、荜茇根、蚕豆壳、刺梨根、豆蔻花、山楂叶粉碎过50-80目筛,混合均匀送入浸提罐中,加中药颗粒重量4-6倍水,微沸煎煮30-50min,过滤,得中药浸提液;
(2)将糯米淘洗干净后放入锅中,加入上述制得的中药浸提液,大火煮至糯米6-7成熟,捞出,放在蒸锅中蒸熟;
(3)蒸熟的糯米中加入西米淀粉、木薯淀粉、瓜蒌籽油、山楂核粉、红萝卜籽粉、薏仁粉搅拌均匀,将拌好的料压成1-1.5毫米厚的糯米片,按规格要求切片;
(4)将切好的糯米片放入油温为230-240℃的食用油中油炸3-6min,炸成浅黄色捞出,沥干油后,两面均匀撒上五香粉,包装即为成品。
本发明的有益效果:
本发明采用荜茇根、蚕豆壳、刺梨根、豆蔻花、山楂叶等中草药的浸提液蒸煮糯米,而上述所用中草药均具有开胃消食功效,蒸煮过程中,糯米可以充分吸收中草药的有效成分,然后又将蒸熟的糯米与具有开胃消食功效的瓜蒌籽油、山楂核粉、红萝卜籽粉、薏仁粉混合制得糯米锅巴,可以大大强化锅巴的开胃消食功效,提高锅巴的营养保健价值。

一种开胃消食糯米锅巴,由下列重量(kg)的原料制成:糯米 30、西米淀粉 3、木薯淀粉 3、瓜蒌籽油1、山楂核粉 2、红萝卜籽粉2、薏仁粉1.5、五香粉 3、陈皮2、鸡内金2、桂圆壳1、麦芽2、太子参3、荜茇根2、蚕豆壳1.5、刺梨根1、豆蔻花2、山楂叶1。
一种开胃消食糯米锅巴的制备方法,包括以下步骤:
(1)将陈皮、鸡内金、桂圆壳、麦芽、太子参、荜茇根、蚕豆壳、刺梨根、豆蔻花、山楂叶粉碎过60目筛,混合均匀送入浸提罐中,加中药颗粒重量4-6倍水,微沸煎煮40min,过滤,得中药浸提液;
(2)将糯米淘洗干净后放入锅中,加入上述制得的中药浸提液,大火煮至糯米6成熟,捞出,放在蒸锅中蒸熟;
(3)蒸熟的糯米中加入西米淀粉、木薯淀粉、瓜蒌籽油、山楂核粉、红萝卜籽粉、薏仁粉搅拌均匀,将拌好的料压成1毫米厚的糯米片,按规格要求切片;
(4)将切好的糯米片放入油温为240℃的食用油中油炸4min,炸成浅黄色捞出,沥干油后,两面均匀撒上五香粉,包装即为成品。

1.一种开胃消食糯米锅巴,其特征在于,由下列重量份的原料制成:糯米 30-40、西米淀粉 3-5、木薯淀粉 2-4、瓜蒌籽油0.5-1.5、山楂核粉 2-3、红萝卜籽粉1-3、薏仁粉1-2、五香粉 3-4、陈皮2-3、鸡内金1-3、桂圆壳1-2、麦芽2-3、太子参3-4、荜茇根2-3、蚕豆壳1-2、刺梨根1-2、豆蔻花2-3、山楂叶1-3。
2.根据权利要求1所述的一种开胃消食糯米锅巴,其特征在于,由下列重量份的原料制成:糯米 30、西米淀粉 3、木薯淀粉 3、瓜蒌籽油1、山楂核粉 2、红萝卜籽粉2、薏仁粉1.5、五香粉 3、陈皮2、鸡内金2、桂圆壳1、麦芽2、太子参3、荜茇根2、蚕豆壳1.5、刺梨根1、豆蔻花2、山楂叶1。
3.一种如权利要求1或2所述的开胃消食糯米锅巴的制备方法,其特征在于包括以下步骤:
将陈皮、鸡内金、桂圆壳、麦芽、太子参、荜茇根、蚕豆壳、刺梨根、豆蔻花、山楂叶粉碎过50-80目筛,混合均匀送入浸提罐中,加中药颗粒重量4-6倍水,微沸煎煮30-50min,过滤,得中药浸提液;
将糯米淘洗干净后放入锅中,加入上述制得的中药浸提液,大火煮至糯米6-7成熟,捞出,放在蒸锅中蒸熟;
蒸熟的糯米中加入西米淀粉、木薯淀粉、瓜蒌籽油、山楂核粉、红萝卜籽粉、薏仁粉搅拌均匀,将拌好的料压成1-1.5毫米厚的糯米片,按规格要求切片;
将切好的糯米片放入油温为230-240℃的食用油中油炸3-6min,炸成浅黄色捞出,沥干油后,两面均匀撒上五香粉,包装即为成品。
