Abstract
本发明提供一种适宜三高人群食用的牛肉,以实现三高协同调理。其用下述重量份原料按照如下方法制成:牛肉100-140,加入肉桂3-6、枸杞3-6、莲子3-6、山药3-6、玉竹3-6、芡实3-6、黑枣3-6、柿叶7-12、桑叶7-12,再加入葱、盐为调料,用水煮熟捞出即可。本发明多采用补中益气药食同源原料,均具有降压、降低血糖和血脂作用,同时牛肉不仅味道鲜美,而且醇厚,肉质口感非常的好,能补充人体所需的蛋白质,牛肉中脂肪含量很低,但却富含结合亚油酸,这些潜在的抗氧化剂可以有效对抗运动中造成的组织损伤。

技术领域
本发明属于食品制造技术领域,特别是一种保健牛肉。
背景技术
“三高”是指:高血压,高血脂,高血糖。患有“三高”中任意一种疾病的患者称为三高人群。“三高”是心脑血管病的罪魁祸首,严重危害现代人健康。而且三高之间互相都有关系,特别是高血压与糖尿病都与高血脂关系密切,因此防治高血压病与糖尿病都应该同时降血脂。
三高人群饮食需要低糖、低脂,三高人群饮食因此受到很多限制。现有的调节三高的食品都功能单一,一般只适合某一种症状,无法实现三高协同调理。虽然牛肉相比较与大肉脂肪较低,但是传统制作方法对于三高人群控制低糖、低脂来说还是不够理想。
发明内容
本发明目的是提供一种适宜三高人群食用的牛肉,以实现三高协同调理。
适宜三高人群食用的保健牛肉,其用下述重量份原料按照如下方法制成:牛肉100-140,加入肉桂3-6、枸杞3-6、莲子3-6、山药3-6、玉竹3-6、芡实3-6、黑枣3-6、柿叶7-12、桑叶7-12,再加入葱、盐为调料,用水煮熟捞出即可。
本发明在制作牛肉过程中添加的肉桂对心血管系统有很好的保健作用:肉桂水提物及挥发油对大鼠在冰水应激状态下内源性儿茶酚胺分泌增加所致的血小板聚集及心肌损伤有一定对抗及保护作用;肉桂可使麻醉犬冠脉、脑血流量增加,血管阻力下降;肉桂水煎后期中的桂皮醛及香豆素对ADP诱导大鼠血小板聚集有抑制作用。肉桂还具有降压和控制血糖平衡,防止和治疗糖尿病。
枸杞子补肝肾,强筋骨,润肺,明目,主治胆肾阳虚,腰膝酸软,虚劳咳嗽,头目眩晕,目赤生翳,消渴等症。
莲子补脾止泻,益肾涩清,养心安神,用于脾虚久泻,遗精带下,心悸失眠,主治夜寐多梦,失眠,健忘,心烦口渴,腰痛脚弱,耳目不聪,遗精,淋浊,久痢,虚泻。而且证明莲子具有防癌抗癌营养保健功能。莲子所含非结晶形生物碱N-9有降血压作用。
山药健脾益胃助消化,滋肾益精,强健机体,滋肾益精的作用。大凡肾亏遗精、妇女白带多、小便频数等症,皆可服之。有降低血糖的作用。可用于治疗糖尿病,是糖尿病人的食疗佳品。
玉竹对阴虚外感,头昏眩晕,筋脉挛痛具有疗效。玉竹对心脏的作用与其中所含的铃兰苦甙、铃兰甙有关,适合治疗心悸、心绞痛;对血压的作用:静脉注射可使血压暂时下降;对血糖的影响:口服玉竹浸膏,则血糖先升后降,对肾上腺素引起的高血糖有显著的抑制作用,对葡萄糖、四氧嘧啶引起的大鼠高血糖也有抑制作用,可用于糖尿病;玉竹中有抗氧化作用的成分,可调节人体免疫力,抑制肿瘤的生长。
芡实补中益气,为滋养强壮性食物,和莲子有些相似,但芡实的收敛固精作用比莲子强,适用于慢性泄泻和小便频数,梦遗滑精,妇女带多腰酸等。芡实是健脾补肾的绝佳首选,若能与山药同舟共济,那补益的效果就更佳了。
黑枣能补中益气,养胃健脾,养血壮神,润心肺,调营卫、生津液,悦颜色,通九窍,助十二经,解药毒,调和百药。黑枣的作用一:
能提高人体免疫力,并可抑制癌细胞:药理研究发现,红枣能促进白细胞的生成,降低血清胆固醇,提高血清白蛋白,保护肝脏,红枣中还含有抑制癌细胞,甚至可使癌细胞向正常细胞转化的物质。黑枣的作用二:经常食用鲜枣的人很少患胆结石,这是因为鲜枣中丰富的维生素C,使体内多余的胆固醇转变为胆汁酸。胆固醇少了,结石形成的概率也就随之减少。黑枣的作用三:枣中富含钙和铁,它们对防治骨质疏松产贫血有重要作用:中老年人更年期经常会骨质疏松,正在生长发育高峰的青少年和女性容易发生贫血,大枣对他们会有十分理想的食疗作用,其效果通常是药物不能比拟的;黑枣的作用对病后体虚的人也有良好的滋补作用。
柿子叶中含有大量丹宁酸,如果使用柿子叶来泡澡可是有好处的,这些物质通过渗透到水中可以有效的杀灭各种细菌和真菌,具有清洁和滋润皮肤的功效,是最简单又有季节感的美容方法。柿树叶除含有相当可观的蛋白质、氨基酸及多种维生素外,还有胆碱、芦丁和丹宁,具有抗菌、消炎、活血、降压、降脂、抗癌作用,特别是它含的维生素C可达1800mg/100g,远高于常见的水果和蔬菜。它能抗坏血病,防治支气管炎、防癌、抗癌。柿叶茶防治动脉硬化、高血压、冠心病的功能食品和药物。
桑叶具有降血压、血脂、抗炎等作用。实验证明,桑叶所含的蜕皮甾酮对多种方法诱导的血糖升高均有降糖作用,可促进葡萄糖转化为糖元,但不改变正常动物的血糖。
本发明多采用补中益气药食同源原料,均具有降压、降低血糖和血脂作用,同时牛肉不仅味道鲜美,而且醇厚,肉质口感非常的好,能补充人体所需的蛋白质,牛肉中脂肪含量很低,但却富含结合亚油酸,这些潜在的抗氧化剂可以有效对抗运动中造成的组织损伤。另外,亚油酸还可以作为抗氧化剂保持肌肉块。通过这些烹饪原料的添加,不仅适宜于生长发育、术后、病后调养的人、中气下隐、气短体虚、筋骨酸软、贫血久病及面黄目眩之人食用;也适合感染性疾病、肝病、肾病的人慎食;黄牛肉为发物,患疮疥湿疹、痘痧、瘙痒者慎用。特别是适合高胆固醇、高脂肪和高血糖、高血压人群食用。
具体实施方式
牛肉100-140,加入肉桂3-6、枸杞3-6、莲子3-6、山药3-6、玉竹3-6、芡实3-6、黑枣3-6、柿叶7-12、桑叶7-12,再加入葱、盐为调料,用水煮熟捞出即可。
本发明由于采用原料均为药食同源调料烹制牛肉,没有毒副作用,在2012年1月自2013年11月期间经过258名有三高症状的人群连续每天以实施例制作的牛肉6个月,食用者均为患有三高病症多年,平均年龄超过49.2岁,并且多人同时交叉患有三高症。在期间不改变原有饮食、用药习惯,每日食用本发明制作牛肉200-300克。6个月后统计结果如下:
统计其中124名有继发性高血压症状者中,服用前血压160—179/100—109mmHg,均有下降,同时伴有脑出血、心力衰竭、肾功能衰竭等病变得到一定程度控制。
其中108人有继发性高脂血症服用前LDL-C浓度>130mg/dl,食用6个月后LDL-C浓度<100mg/dl。
其中97人自述患有糖尿病,并在开始前测血糖:2h血糖≥12.2mmol/L;IGT:2h血糖≥8.9mmol/L且<12.2mmol/L,诊断为糖尿病。食用6个月后,测量糖化血红蛋白,HbA1c3.8-6.9%,说明在食用后血糖控制比较理想。

1.适宜三高人群食用的保健牛肉,其特征是用下述重量份原料按照如下方法制成:牛肉120、肉桂5、枸杞5、莲子5、山药5、玉竹5、芡实5、黑枣5、柿叶10、桑叶10,再加入葱、盐为调料,用水煮熟捞出即可。
