动物肝脏富含蛋白质、氨基酸,B族维生素,特别是维生素B12含量较高,具有很好的营养及补血作用,且具有助消化,增进食欲的作用,临床医学常用的肝浸膏片、肝精注射液作为肝炎、胃病、消化不良、营养不良等的辅助治疗剂应用。肝脏经水解制成浸膏,其营养价值较肝脏本身有很大提高,各种氨基酸多呈小分子肽类存在,更利于人体的吸收,就肝浸膏与具有滋补功效的枸杞、大枣、沙棘制得的提取物配伍制备成一种营养食品,目前未见有相关文献报道。

一种营养食品,其特征是由动物肝脏浸膏与中药原料枸杞、枣、沙棘的中药水提取物及红砂糖组成,其成分重量比为肝浸膏:中药水提取物:红砂糖=8:1:0.8;其中肝浸膏是由新鲜动物肝脏,剔除脂肪和结缔组织,绞碎成浆状,在PH值5-6、温度88-92℃条件下进行二次水解,合并滤液,经浓缩成含水量为25%的稠膏而得到的;中药水提取物是由中药原料枸杞、枣、沙棘按重量份1:3:1配比,通过水煮提取3次、过滤、乙醇沉淀,浓缩干燥而得到的;将肝浸与中药水提取物及红砂糖按重量份8:1:0.8配比混合,搅拌均匀,经干燥,粉碎,过筛,定量包装制得。
所述的动物肝脏是牛肝、羊肝、猪肝、兔肝、鸡肝、鸭肝、鹅肝中的任意一种新鲜肝脏。
一种营养食品的生产方法,其特征是按照下述方法步骤:
(1)取新鲜健康的动物肝脏,剪除胆囊、输胆管、脂肪及结缔组织用蒸馏水洗净,绞碎成浆状,加入物料重量50%的蒸馏水,加入0.1mol/L盐酸溶液,搅拌均匀,使PH值至5-6,加热至88-92℃,保持1.5小时后,过滤,得滤液保存;滤渣采用同上方法进行二次提取,过滤,滤后的肝渣再放入离心机内,离心分离,合并滤液,在温度89-91℃的条件下浓缩成含水量为25%的稠膏状,即得肝浸膏备用;
(2)将中药原料枸杞、枣、沙棘按重量份1:3:1配比分别清洗干净,一并投入夹层蒸煮锅中,蒸汽加热煎煮提取3次,其条件是分别加入中药原料重量10倍、5倍、3倍的纯净水,分别提取2.5小时、2小时、1小时,然后合并滤液,加热浓缩至提取液体积的1/10,放冷,加入浓度为95%(V/V)的食用乙醇,使液体乙醇的浓度至70%(V/V),搅拌均匀,置于0-5℃环境下,冷藏48小时,然后过滤,将滤液于65-70℃条件下真空蒸发回收乙醇,余液继续浓缩成稠膏,将稠膏于80℃条件下烘干,经粉碎得中药水提取物,备用;
(3)将步骤(1)得到的肝浸膏与步骤(2)得到的中药水提取物和红砂糖,按重量比为8:1:0.8配比混合,搅拌均匀,于70-75℃条件下烘干至含水量小于2%,经粉碎,过80目筛,采用真空包装或充氮包装,制得成品。

沙棘,本品系蒙古族、藏族习用药材。为胡颓子科植物沙棘Hippophae rhamnonies L.的干燥成熟果实。酸、涩、温。归脾、胃、肺、心经。健脾消食,止咳祛痰,活血散瘀。用于脾虚食少,食积腹痛,咳嗽痰多,胸痹心痛,瘀血经闭,跌打瘀肿。现代药理分析本品有抗胃溃疡、调节血糖、降血脂、抗高免疫、抗氧化、抗肝损伤、抗肿瘤、降低血黏度等作用(中国药典·用药须知.中药饮片卷.2010年版)。贾公孚主编《临床药物新用联用大全》第2版介绍沙棘药理研究具有:①抗变态反应作用;②免疫调节增强作用;③护肝作用;④抗溃疡作用;⑤降脂作用,抗动脉粥样硬化;⑥心血管调节作用,抗心律失常作用;⑦抗肿瘤作用;⑧抗氧化作用;抗衰老作用;⑨抗血小板聚集,降低血黏度,改善血流状态,抑制血栓形成;⑩治疗造血功能障碍;⑪抗化学、辐射损伤;⑫抗炎作用。临床常用于急慢性肝炎、冠心病心绞痛、高脂血症以及黄褐斑的治疗。
本发明的有益效果:
本发明提供的营养食品,是由动物肝脏经水解制成浸膏再与具有益补肝肾、益精明目的枸杞和具有补气健脾、养血安神功效的大枣以及具有清除自由基、延缓衰老、增强免疫力功能的沙棘中药提取物配合制成,使得产品具有很好的补益肝肾、补血、益气的有益功效,为营养食品增添了新品种。本发明的方法,其工艺合理,肝脏经水解后其氨基酸呈肽类分子状态,利于机体代谢和吸收,提取工艺使得肝脏的有益成分和中药成分得到浓缩,减少服用剂量份额,利于食用,由于提取均处在低温状态下进行,能够使得提取物最大限度地保留了其原有的营养成分,同时也使得有益成分避免了高温造成的破坏和损失。本发明包装采用真空包装或充氮包装,可更有效地避免了产品的吸湿、结块等现象的发生。本发明生产方法工艺简单,操作简单易控制,成本低,不污染环境,易于工业化生产。本发明方法为动物肝脏的有效利用,同时配伍具有营养功效的中药制备营养食品,起到了资源利用的有益效果。

通过以下实施例对本发明作进一步的说明。
实施例1
取新鲜健康的牛肝,剪除胆囊、输胆管、脂肪及结缔组织,用蒸馏水洗净,置绞碎机上绞碎成浆状,加入物料重量50%的蒸馏水,加入0.1mol/L盐酸溶液适量,使PH值至5-6,搅拌均匀,加热至92℃,保持1.5小时后,过滤,得滤液保存;滤渣再加入物料重量50%的蒸馏水,用0.1mol/L盐酸溶液使PH值至5-6,搅拌均匀,加热至92℃保持1.5小时后,过滤取滤液,然后将滤后的肝渣用离心机离心分离,分离液并入滤液中,合并滤液,在温度89℃的条件下浓缩成含水量为25%的稠膏状,得肝浸膏。
实施例2
取新鲜健康的兔肝,剪除胆囊、输胆管、脂肪及结缔组织,用蒸馏水洗净,置绞碎机上绞碎成浆状,加入物料重量50%的蒸馏水,加入0.1mol/L盐酸溶液适量,使PH值至5-6,搅拌均匀,加热至90℃,保持1.5小时后,过滤,得滤液保存;滤渣再加入物料重量50%的蒸馏水,用0.1mol/L盐酸溶液使PH值至5-6,搅拌均匀,加热至90℃保持1.5小时后,过滤取滤液,然后将滤后的肝渣用离心机离心分离,分离液并入滤液中,合并滤液,在温度91℃的条件下浓缩成含水量为25%的稠膏状,得肝浸膏。
实施例3
取新鲜健康的鸡肝,剪除胆囊、输胆管、脂肪及结缔组织,用蒸馏水洗净,置绞碎机上绞碎成浆状,加入物料重量50%的蒸馏水,加入0.1mol/L盐酸溶液适量,使PH值至5-6,搅拌均匀,加热至88℃,保持1.5小时后,过滤,得滤液保存;滤渣再加入物料重量50%的蒸馏水,用0.1mol/L盐酸溶液使PH值至5-6,搅拌均匀,加热至88℃保持1.5小时后,过滤取滤液,然后将滤后的肝渣用离心机离心分离,分离液并入滤液中,合并滤液,在温度90℃的条件下浓缩成含水量为25%的稠膏状,得肝浸膏。
实施例4
取枸杞10公斤,枣30公斤,沙棘10公斤分别清洗干净后,一并投入夹层蒸煮锅中,加水500公斤,用蒸汽加热煎煮提取2.5小时,过滤,滤液保存,药渣加入250公斤水,煎煮2小时,过滤,滤液保存,滤渣加入150公斤,煎煮提取1小时,过滤,取滤液,然后合并滤液,加热浓缩成90公斤,放冷,加入浓度为95%(V/V)的食用乙醇,使成液体含乙醇浓度至70%(V/V),搅拌均匀,置于0-5℃环境下,冷藏48小时,然后过滤,将滤液于65-70℃条件下真空蒸发回收乙醇,余液继续浓缩成稠膏,然后将稠膏于80℃条件下烘干,经粉碎得中药水提取物。
实施例5
称取实施例1制得的肝浸膏8公斤与实施例4得到的中药水提取物1公斤和红砂糖0.8公斤配比混合;搅拌均匀,置入烘箱中在70-75℃条件下烘干至含水量小于2%,用高密度复合铝箔袋抽真空包装,即制得营养食品成品。
实施例6
称取实施例2得到的肝浸膏8公斤与实施例4得到的中药提取物1公斤和红砂糖0.8公斤配比混合,搅拌均匀,用制粒机直接制成16目颗粒,然后置入烘箱中,在70-75℃条件下烘干至含水量小于2%,采用聚乙烯袋真空包装,即得颗粒剂成品。
实施例7
将实施例6制得的颗粒,经过整粒后,在胶囊填充机中以每次0.5克填充胶囊,然后采用铝箔袋充氮包装,即得胶囊剂成品。
实施例8
将实施例6制得的颗粒,经整粒后,加入硬酯酸镁100克与颗粒充分混匀,采用压片机压制成片重0.5克的片剂,然后采用真空或充氮包装,即得片剂成品。
以上实施例5-8制得的成品,经检测各项指标均国家食品卫生标准,经留样观察3个月、6个月和12个月分别进行抽检,各项卫生指标均符合规定。产品具有很好的稳定性。
Claims (3)
1.一种营养食品,其特征是由动物肝脏浸膏与中药材枸杞、枣、沙棘的水提取物及红砂糖组成,按以下方法制得:(1)取新鲜健康的动物肝脏,剪除胆囊、输胆管、脂肪及结缔组织用蒸馏水洗净,绞碎成浆状,加入物料重量50%的蒸馏水,加入0.1mol/L盐酸溶液,搅拌均匀,使pH值至5-6,加热至88-92℃,保持1.5小时后,过滤,得滤液保存;滤渣采用同上方法进行二次提取,过滤,滤后的肝渣再放入离心机内,离心分离,合并滤液,在温度89-91℃的条件下浓缩成含水量为25%的稠膏状,得肝浸膏;(2)将中药原料枸杞、枣、沙棘按重量份1:3:1配比分别清洗干净,一并投入夹层蒸煮锅中,蒸汽加热煎煮提取3次,其条件是分别加入中药原料重量10倍、5倍、3倍的纯净水,分别提取2.5小时、2小时、1小时,然后合并滤液,加热浓缩至提取液体积的1/10,放冷,加入浓度为95% V/V的食用乙醇,使液体乙醇的浓度至70% V/V,搅拌均匀,置于0-5℃环境下,冷藏48小时,然后过滤,将滤液于65-70℃条件下真空蒸发回收乙醇,余液继续浓缩成稠膏,将稠膏于80℃条件下烘干,经粉碎得中药水提取物;(3)将(1)得到的肝浸膏与(2)得到的中药水提取物和红砂糖,按重量比为8:1:0.8配比混合,搅拌均匀,于70-75℃条件下烘干至含水量小于2%,经粉碎,过80目筛,采用真空包装或充氮包装,制得成品。
2.如权利要求1所述的营养食品,其特征在于,所述的动物肝脏是牛肝、羊肝、猪肝、兔肝、鸡肝、鸭肝、鹅肝中的任意一种新鲜肝脏。
3.根据权利要求2所述的营养食品,其特征在于,还可进一步加工成颗粒剂、片剂、胶囊剂和口服液。
