本发明涉及一种天然黄腐酸复合保健饮料及其制备方法,属于饮料加工技术领域。
背景技术
黄腐酸是腐植酸中分子量最小、溶解度最高、生物活性最强的部分,含活性官能团多,易被人体吸收利用。黄腐酸的药用研究已有多年,明朝李时珍的《本草纲目》记述一种“乌金散”,就是现在的腐植酸。腐植酸的医疗功能,经北京医科大学、同仁医院、海军总院等多家医学单位临床应用研究表明:腐植酸具有抗炎、抗溃疡和免疫作用,对血循环系统、内分泌功能等也有明显医疗作用;目前黄腐酸的应用主要在农业和医学方面,在食品方面的运用很少,尽管黄腐酸的药用价值高,但目前仅用于药物治疗,尚未进入保健食品,现在的市场上还没有以黄腐酸为主要原料制成的饮料,黄腐酸的医用功效未得到充分应用,在保健饮料方面仅有文章一篇和专利两篇,文章“腐植酸药用分析及食品资源设想”哈尔滨科学技术大学学报,1990年9月,只是根据腐植酸的药效,设想了腐植酸可以做成食品饮料和食品添加剂,未有实质性的技术方案;专利CN2011100866696用煤炭生产天然腐植酸活体强身饮料技术,该专利题目与内容有些不符,题目是腐植酸活体强身饮料,实际内容上写的是用煤炭粉提取黄腐酸的工艺,提取出的黄腐酸直接就当饮料了,没有按食品生产常规知识制作饮料,同时提取的黄腐酸未经过纯化,煤炭中所含的重金属会富集在黄腐酸中,直接作为饮料存在不足;专利CN03132506.8腐植酸保健饮品及腐植酸在饮料方面的应用,全面的概述了腐植酸可以做成的一系列饮品,包含饮料,对腐植酸的功能做出了论述,对腐植酸饮料做出了设想,但未有实质性的技术方案,设想中每百份基料中含有40-60重量份的腐植酸,制成的饮品或饮料已不具备食品饮料应有的口味,而成了药味十足的一味药汤了,该论述中用糖精作为甜味剂,糖精是一种不安全的食品添加剂,食用糖精对人体健康有害无益,作为保健饮料是不应该使用糖精作为甜味剂的。所述用的腐植酸同样未经纯化除去重金属等,如砷、汞、铅对人体有害元素。而腐植酸中上述有害元素都是超标的。
发明内容
本发明的目的就是克服现有技术存在的问题,提供一种经济实用,疗效好,口味佳,无副作用,适合长期饮用的保健饮料,本发明所用原料只用腐植酸的精华部分黄腐酸并经过纯化达到食用要求。
本发明天然黄腐酸复合保健饮料技术方案是:复合保健饮料含有食用级天然黄腐酸,中药提取物,甜味剂,酸味剂或稳定剂中的一种或几种,再与水调配而成,其各组分重量百分比为:食用级天然黄腐酸0.1%~0.6%,中药提取物0.05-0.2%,甜味剂2%~6%,酸味剂0.01%~0.5%,稳定剂0.01-0.15%,余量为水。
所述天然黄腐酸为从年青煤中提取并纯化的食用级或医用级天然黄腐酸,黄腐酸经纯化后,所含重金属降低至食品要求,灰分从15-20%降低至1.5%以下;
所述中药提取物为石斛、西洋参中的一种或两种;
所述甜味剂为蔗糖、葡萄糖、蜂蜜、低聚果糖、麦芽糖、果葡糖浆中的一种或几种;
所述酸味剂为柠檬酸、苹果酸 、葡萄糖酸、柠檬酸钠中的一种或几种;
所述稳定剂为海藻酸钠、黄原胶、卡拉胶、瓜尔豆胶、果胶、羧甲基纤维素钠、异Vc中的两种或三种混合物。
一种天然黄腐酸复合保健饮料的制备方法,其特征在于具体包括有以下工艺步骤:
(1)、石斛粉碎后加3倍重量水浸泡6hr,放进超声波发生器超声30min,加入1-2%复合酶55-60℃酶解90-120min,再加5倍重量水,升温至90℃两次浸提,第一次1hr, 第二次0.5hr,合并二次滤液,过滤,60-70℃浓缩成浸膏,为中药石斛提取物,备用;
(2)、西洋参粉碎后加8倍重量水,加热至75℃放进超声波发生器,超声提取45 min,再重复提取2次,合并三次滤液,过滤,60-70℃浓缩得浸膏,为中药西洋参提取物,备用;
(3)、依次按量加入黄腐酸、中药提取物、甜味剂、80-90℃时加热搅拌溶解、停止加热后加入酸味剂、静置、过滤;
(4)、过滤后的饮料在压力15-20MPa 、70-75℃时下均质,趁热灌装、脱气、压盖;

所述的饮料其各组分重量百分比为:食用级天然黄腐酸0.1%~0.6%,中药提取物0.05-0.2%,甜味剂2%~6%,酸味剂0.01%~0.5%,稳定剂0.01-0.15%,余量为水。
所述天然黄腐酸为从年青煤中提取并纯化的食用级或医用级天然黄腐酸,黄腐酸经纯化后,所含的重金属降低至食品要求,灰分从15-20%降低至1.5%以下;
所述甜味剂为蔗糖、葡萄糖、蜂蜜、低聚果糖、麦芽糖、果葡糖浆中的一种或几种;
所述酸味剂为柠檬酸、苹果酸 、葡萄糖酸、柠檬酸钠中的一种或几种;
所述稳定剂为海藻酸钠、黄原胶、卡拉胶、瓜尔豆胶、果胶、羧甲基纤维素钠、异Vc中的两种或三种混合物。

4、具有防治胃肠疾病,抗肿瘤,提高机体免疫力,缓解体力疲劳,降低血糖血脂,改善食欲和睡眠等保健功效,长期饮用,无副作用。

下面详细描述本发明的实施例,对实施例的描述中将变得明细和容易理解本发明上述或附加方面和优点。
本发明天然黄腐酸复合保健饮料由食用级天然黄腐酸、中药提取物、甜味剂、酸味剂、稳定剂、水调配而成,其各组分重量百分比为:食用级天然黄腐酸0.1%~0.6%、中药提取物0.05-0.2%,、甜味剂2%~6%、酸味剂0.01%~0.5%、复合稳定剂0.01-0.15%,余量为水。
本发明天然黄腐酸是从年青煤中提取并纯化的食用级或医用级天然黄腐酸,黄腐酸经纯化后,所含的重金属降低至食品要求,灰分从15-20%降低至1%以下;所述的中药提取物为石斛、西洋参的一种或两种;所述的甜味剂为蔗糖、葡萄糖、蜂蜜、低聚果糖、麦芽糖、果葡糖浆中的一种或多种;所述的酸味剂为柠檬酸、苹果酸、葡萄糖酸、柠檬酸钠的一种或两种;所述的稳定剂为海藻酸钠、黄原胶、卡拉胶、瓜尔豆胶、果胶、羧甲基纤维素钠、异Vc中的两种或三种混合物。
本发明天然黄腐酸复合保健饮料制作工艺过程为:
1)、石斛粉碎后加3倍重量水浸泡6hr,放进超声波发生器超声30min,加入1-2%复合酶55-60℃酶解90-120min,再加5倍重量水,升温至90℃两次浸提,第一次1hr, 第二次0.5hr,合并二次滤液,过滤,60-70℃浓缩成浸膏,为中药石斛提取物,备用;
2)、西洋参粉碎后加8倍重量水,加热至75℃放进超声波发生器,超声提取45 min,再重复提取2次,合并三次滤液,过滤,60-70℃浓缩得浸膏,为中药西洋参提取物,备用;
3)、依次按量加入黄腐酸、中药提取物、甜味剂、80-90℃时加热搅拌溶解、停止加热后加入酸味剂、静置、过滤;
4)、过滤后的饮料在压力15-20MPa 、70-75℃时下均质,趁热灌装、脱气、压盖;
5)、在80-95℃条件下20-40min进行杀菌,冷却后即制得天然黄腐酸复合保健饮料成品。
质量标准 :符合食品茶饮料GB 19296-2003标准
感官指标:
黄腐酸复合保健饮料色泽咖啡,清亮,均匀一致;味感协调,无异味;组织状态:稳定均一,久置无分层、沉淀现象,无杂质;滋味:饮料酸甜适口,细腻,滋味柔和,协调,滑润爽口。
理化指标 :
As≤0.2mg/L, Pb≤0.3mg/L, Cu ≤5mg/L。
卫生指标:
菌落总数≤100cfu/mL,大肠菌群≤3MPN/100mL,霉菌,酵母 ≤ 20 cfu/mL, 致病菌(沙门氏菌、志贺氏菌、金黄色葡萄球菌)未检出。
本发明不含香精、糖精,色素等化学制品,饮料颜色即为天然黄腐酸的深咖啡色,与可口可乐饮料颜色相近;同时根据传统中医养生保健理论,采用石斛或西洋参两味常用的传统中药,并属于我国卫生部发布的药食用同源植物来提高黄腐酸药效,起到协同作用,从而能够实现更加有效的保健作用,其中选用的铁皮石斛是我国最珍贵的中药材之一,被尊列为“中华九大仙草”之首,素有“药中黄金”之美称。铁皮石斛其主要的功效有:补气养阴,益胃生津,清热淡火。用于气虚阴亏,内热,咳喘痰血,虚热烦倦,消渴,口燥咽干。西洋参补气养阴,清热生津。用于气虚阴亏,内热,咳喘痰血,虚热烦倦,消渴,有增强中枢神经系统功能,保护心血管系统,提高免疫力,促进血液活力,治疗糖尿病的功效。
本发明为多功能一体的保健饮料,主要通过日常饮用方式,从根源防病治病,适用性广,推广价值高。
下列实施例,仅用于解释本发明,而不能理解为对本发明的限制。
实施例1:
1、100g石斛粉碎后加3倍重量水浸泡4hr,放进超声波发生器超声30min,加入1-2%复合酶55-60℃酶解90-120min,再加5倍重量水,升温至90℃两次浸提,第一次1hr, 第二次0.5hr,合并二次滤液,过滤,60-70℃浓缩成浸膏,得到浸膏22g,为中药石斛提取物,备用;
2、依次称取黄腐酸20g,石斛提取物6g,白糖300g,葡萄糖100g, 羧甲基纤维素钠4g,海藻酸钠1g,异Vc3g,加水10kg进行调配,85℃时加热搅拌溶解,停止加热后加入5g柠檬酸搅拌溶解,静置,过滤;
3、过滤后的饮料在压力20MPa ,70℃时下均质,趁热灌装、脱气、压盖;
4、在95℃条件下25min进行杀菌,冷却后即制得天然黄腐酸复合保健饮料成品。
实施例2:
1、100g西洋参粉碎后加8倍重量水,加热至75℃放进超声波发生器,超声提取45 min,再重复提取2次,合并三次滤液,过滤,60-70℃浓缩得浸膏25g,为中药西洋参提取物,备用;
2、依次称取黄腐酸30g,西洋参提取物5g,蜂蜜200g, 麦芽糖250g,羧甲基纤维素钠3g,黄原胶2g,瓜尔豆胶2g,加水10kg进行调配,90℃时加热搅拌溶解,停止加热后加入20g苹果酸搅拌溶解,静置,过滤;
3、过滤后的饮料在压力15MPa ,75℃时下均质,趁热灌装、脱气、压盖;
4、在90℃条件下30min进行杀菌,冷却后即制得天然黄腐酸复合保健饮料成品。
实施例3:
1、石斛、西洋参中药提取物方法同实施例1和实施例2;
2、依次称取黄腐酸25g,石斛浸膏3g,西洋参浸膏3g,白糖250g,麦芽糖200g, 瓜尔豆胶4g,黄原胶2g,果胶2g,加水10kg进行调配,85℃时加热搅拌溶解,停止加热后加入10g柠檬酸钠搅拌溶解,静置,过滤;
3、过滤后的饮料在压力15MPa ,75℃时下均质,趁热灌装、脱气、压盖;
4、在90℃条件下30min进行杀菌,冷却后即制得天然黄腐酸复合保健饮料成品。
实施例4:
1、石斛、西洋参中药提取物方法同实施例1和实施例2;
2、依次称取黄腐酸30g,石斛浸膏2g,西洋参浸膏3g,白糖200g,低聚果糖、150g, 瓜尔豆胶4g,卡拉胶2g,异Vc4g,,加水10kg进行调配,90℃时加热搅拌溶解,停止加热后加入15g苹果酸搅拌溶解,静置,过滤;
3、过滤后的饮料在压力15MPa ,80℃时下均质,趁热灌装、脱气、压盖;
4、在90℃条件下30min进行杀菌,冷却后即制得天然黄腐酸复合保健饮料成品。
Claims (5)
1.一种天然黄腐酸复合保健饮料,其特征在于,复合保健饮料含有食用级天然黄腐酸,中药提取物,甜味剂,酸味剂或稳定剂中的一种或几种,再与水调配而成,其各组分重量百分比为:食用级天然黄腐酸0.1%~0.6%,中药提取物0.05-0.2%,甜味剂2%~6%,酸味剂0.01%~0.5%,稳定剂0.01-0.15%,余量为水。
2.根据权利要求1所述的天然黄腐酸复合保健饮料,其特征在于,所述天然黄腐酸为从年青煤中提取并纯化的食用级或医用级天然黄腐酸,黄腐酸经纯化后,所含重金属降低至食品要求,灰分从15-20%降低至1.5%以下;
所述中药提取物为石斛、西洋参中的一种或两种;
所述甜味剂为蔗糖、葡萄糖、蜂蜜、低聚果糖、麦芽糖、果葡糖浆中的一种或几种;
所述酸味剂为柠檬酸、苹果酸 、葡萄糖酸、柠檬酸钠中的一种或几种;
所述稳定剂为海藻酸钠、黄原胶、卡拉胶、瓜尔豆胶、果胶、羧甲基纤维素钠、异Vc中的两种或三种混合物。
3.一种天然黄腐酸复合保健饮料的制备方法,其特征在于具体包括有以下工艺步骤:
(1)、石斛粉碎后加3倍重量水浸泡6hr,放进超声波发生器超声30min,加入1-2%复合酶55-60℃酶解90-120min,再加5倍重量水,升温至90℃两次浸提,第一次1hr, 第二次0.5hr,合并二次滤液,过滤,60-70℃浓缩成浸膏,为中药石斛提取物,备用;
(2)、西洋参粉碎后加8倍重量水,加热至75℃放进超声波发生器,超声提取45 min,再重复提取2次,合并三次滤液,过滤,60-70℃浓缩得浸膏,为中药西洋参提取物,备用;
(3)、依次按量加入黄腐酸、中药提取物、甜味剂、80-90℃时加热搅拌溶解、停止加热后加入酸味剂、静置、过滤;
(4)、过滤后的饮料在压力15-20MPa 、70-75℃时下均质,趁热灌装、脱气、压盖;
(5)、在80-95℃条件下20-40min进行杀菌,冷却后即制得天然黄腐酸复合保健饮料成品。
4.根据权利要求3所述天然黄腐酸复合保健饮料的制备方法,其特征在于:所述的饮料其各组分重量百分比为:食用级天然黄腐酸0.1%~0.6%,中药提取物0.05-0.2%,甜味剂2%~6%,酸味剂0.01%~0.5%,稳定剂0.01-0.15%,余量为水。
5.根据权利要求3所述天然黄腐酸复合保健饮料的制备方法,其特征在于:所述天然黄腐酸为从年青煤中提取并纯化的食用级或医用级天然黄腐酸,黄腐酸经纯化后,所含的重金属降低至食品要求,灰分从15-20%降低至1.5%以下;
