Abstract
一种麦穗芝麻糊及其制备方法,其特征在于由下列重量份的原料制成:芝麻90-100、麦穗40-45、乙基麦芽酚0.3-0.5、米糠汁3-4、豆腐干9-11、赤豆7-10、玉米5-8、维生素C1-1.2、可乐3-4、罗汉果花3-4、马勃2-3、芦根1-2、护生草4-6、白蒺藜2-3、密蒙花1-2、石斛1-2、柏子仁3-4.5、桂枝2-4、谷精草3-5、香菇调味油12-14。本发明采用芝麻、麦穗作为主要原料,生产出的芝麻糊用开水调制后香糯爽滑,有清新的麦香味,且营养健康,此外,本发明还具有凉血舒骨、平肝解郁,祛风明目、养心安神、润肠通便滋阴益胃的功效。

本发明属于食品加工技术领域,涉及一种芝麻糊,尤其涉及一种麦穗芝麻糊及其制备方法。
背景技术
芝麻糊是以芝麻为原料调制而成,是一种常见的食品,广受人们欢迎。目前,市场上销售的芝麻糊口味单一,且不具功能性保健作用。
发明内容
本发明的目的是提供一种麦穗芝麻糊及其制备方法,本发明具有口感好,营养健康的特点。
本发明所采用的技术方案是:
一种麦穗芝麻糊,其特征在于由以下重量份的原料制成:
芝麻90-100、麦穗40-45、乙基麦芽酚0.3-0.5、米糠汁3-4、豆腐干9-11、赤豆7-10、玉米5-8、维生素C1-1.2、可乐3-4、罗汉果花3-4、马勃2-3、芦根1-2、护生草4-6、白蒺藜2-3、密蒙花1-2、石斛1-2、柏子仁3-4.5、桂枝2-4、谷精草3-5、香菇调味油12-14。
所述香菇调味油由下列重量份原料制成:香菇5-7、棕榈油15-20、花椒1-2、辣椒1.5-2.5、茴香1-1.5、水莎草1-2、隔山香2-3、丝瓜叶2-3.5、铁角凤尾草1-1.5、仙人草2-3、花生叶1-2。
(1)将水莎草、隔山香、丝瓜叶、铁角凤尾草、仙人草、花生叶晒干后粉碎,与香菇加水煎煮10-15分钟,然后将香菇捞出送入烘干机,烘至含水量降为35-40%时出料;
(2)在锅中倒入棕榈油,加热至冒烟时倒入步骤(1)所得物料,小火加热搅拌15-20分钟,然后加入剩余物料,在60-70℃下焖制4-5小时,过滤除渣,即得。
所述的麦穗芝麻糊的制备方法,其特征在于包括以下步骤:
(1)将罗汉果花、马勃、芦根、护生草、白蒺藜、密蒙花、石斛、柏子仁、桂枝、谷精草加5-7倍的水文火煎煮2-3小时,过滤除渣,所得滤液经文火加热,熬成浸膏状。
(2)将赤豆、玉米用清水浸泡60-70分钟后捞出晾干,送入锅中翻炒,同时喷洒米糠汁,炒干后出料,与乙基麦芽酚、步骤(1)所得物料混合均匀,气蒸15-20分钟后捣成泥状,经冷冻干燥后研成粉末;
(3)将豆腐干捣成泥,加入可乐,隔水蒸8-10分钟后烘干,然后进行超微粉碎;
(4)将芝麻、麦穗置于溶有维生素C的水溶液中浸泡5-7小时后捞出晾干,拌入香菇调味油,烘干后粉碎,与步骤(2)、(3)所得物料混合均匀,即得。

一种麦穗芝麻糊,其特征在于由以下重量份(公斤)的原料制成:
芝麻90、麦穗45、乙基麦芽酚0.5、米糠汁4、豆腐干11、赤豆10、玉米8、维生素C1、可乐4、罗汉果花4、马勃3、芦根2、护生草6、白蒺藜3、密蒙花1、石斛2、柏子仁4.5、桂枝4、谷精草5、香菇调味油14。
所述香菇调味油由下列重量份(公斤)原料制成:香菇7、棕榈油20、花椒1、辣椒2.5、茴香1.5、水莎草2、隔山香3、丝瓜叶3.5、铁角凤尾草1.5、仙人草3、花生叶2。
(1)将水莎草、隔山香、丝瓜叶、铁角凤尾草、仙人草、花生叶晒干后粉碎,与香菇加水煎煮10-15分钟,然后将香菇捞出送入烘干机,烘至含水量降为35-40%时出料;
(2)在锅中倒入棕榈油,加热至冒烟时倒入步骤(1)所得物料,小火加热搅拌15-20分钟,然后加入剩余物料,在60-70℃下焖制4-5小时,过滤除渣,即得。
