一种大豆胚芽香肠,其特征在于由以下重量份的原料制成:
鱼肉110-115、大豆胚芽18-22、精盐3-4、鸡精粉2-3、白糖3-4、生抽1-2、鱼胶粉7-9、胡椒粉1.5-3、红豆沙4-5、香菇8-9、核桃仁20-25、绿豆15-20、豆粕粉5-7、倒扣草3-4、豇豆叶2-3、橘叶1-2、丝瓜叶2-3.5、山楂根3-4、绿萼梅1-2、橘络2-3、土贝母4-5、调味油10-12。
所述调味油由下列重量份原料制成:花生油25-30、豆瓣酱1-2、姜末1-2、蒜泥1-2、辣椒0.5-1、桂皮0.5-0.7、茴香1-1.2、肉豆蔻0.4-0.5、肉桂0.8-1、白酒10-15、糯米15-20、洋葱3-4、青菜4-5、当归0.4-0.6、白术0.8-1、千针万线草1-2、南瓜花1.5-2.5、丝瓜络1-2;
制备方法为:(1)当归、白术、千针万线草、南瓜花、丝瓜络加4-5倍的水煎煮40-50分钟,过滤除渣后得提取液;
(2)将糯米、洋葱、青菜与提取液混合入锅,小火翻炒至干燥,加入白酒大火熬制15-20分钟后出料,沥干后捣成泥;

鱼肉110、大豆胚芽22、精盐4、鸡精粉3、白糖3、生抽2、鱼胶粉9、胡椒粉1.5、红豆沙5、香菇9、核桃仁25、绿豆20、豆粕粉7、倒扣草4、豇豆叶2、橘叶2、丝瓜叶3.5、山楂根4、绿萼梅2、橘络3、土贝母5、调味油12。
所述调味油由下列重量份(公斤)原料制成:花生油25、豆瓣酱2、姜末2、蒜泥1、辣椒0.5、桂皮0.7、茴香1、肉豆蔻0.5、肉桂0.8、白酒15、糯米20、洋葱4、青菜4、当归0.6、白术0.8、千针万线草2、南瓜花1.5、丝瓜络2;
制备方法为:(1)当归、白术、千针万线草、南瓜花、丝瓜络加4-5倍的水煎煮40-50分钟,过滤除渣后得提取液;
