本发明公开了一种风味辣椒粉,是由下述重量份的原料制成:红辣椒50-60、剁椒20-24、花椒10-15、辣椒油18-20、魔芋粉4-5、陈皮2-3、辣椒叶1-2、无花果3-4、桑白皮1-2、枸杞子2-3、生地黄1-2、山楂2-3、玉米须1-2、芹菜粉3-4、酸枣仁6-7、麸皮粉2-3、食盐1-2;本发明以红辣椒、剁椒、花椒、辣椒油为主料,配以辅料加工成一种食用方便、营养保健的复合辣椒粉,其香辣可口,风味独特,保质期长,可用作烹饪、烧烤调味品和食品加工用料,具有健胃消食、理气健脾、解毒消肿、补肝益肾、利水通便的功效。

技术领域
本发明涉及一种调味粉,尤其涉及一种风味辣椒粉及其制备方法。
背景技术
辣椒香味浓郁,是厨房中一种必不可少的调味品,但人们大多数用的还是辣椒原材料,需要预处理,已经跟不上人们越来越快的生活节奏;本发明以红辣椒、剁椒、花椒、辣椒油为主料,配以辅料加工成一种食用方便、营养保健的辣椒粉。
发明内容
本发明克服了现有技术中不足,提供了一种风味辣椒粉及其制备方法。
本发明是通过以下技术方案实现的:
一种风味辣椒粉,是由下述重量份的原料制成:
红辣椒50-60、剁椒20-24、花椒10-15、辣椒油18-20、魔芋粉4-5、陈皮2-3、辣椒叶1-2、无花果3-4、桑白皮1-2、枸杞子2-3、生地黄1-2、山楂2-3、玉米须1-2、芹菜粉3-4、酸枣仁6-7、麸皮粉2-3、食盐1-2。
一种风味辣椒粉制备方法,包括以下步骤:
(1)将红辣椒、剁椒去蒂洗净,在90-100℃下漂烫1-2分钟,再用冰水冷却,沥干后切碎备用;
(2)将辣椒油送入锅中,文火烧热,加入花椒和上述切碎的红辣椒、剁椒,小火翻炒15-20分钟,冷冻干燥,研磨至80-100目细度,得到辣椒粉;
(3)将陈皮、辣椒叶、无花果等中药原料混合粉碎,加入6-7倍清水,文火煎煮40-45分钟,过滤,滤液喷雾干燥,得到中药粉;
(4)将酸枣仁与麸皮粉混合,文火炒至熟香,筛去麸皮粉,酸枣仁研磨成粉,过100-120目筛,得到枣仁粉;
(5)将上述辣椒粉、中药粉、枣仁粉与魔芋粉、芹菜粉、食盐混合均匀,灭菌包装即可。

下面结合实施例对本发明作进一步详细描述:
实施例:
一种风味辣椒粉,是由下述重量(斤)的原料制成:
红辣椒60、剁椒24、花椒15、辣椒油20、魔芋粉5、陈皮3、辣椒叶2、无花果4、桑白皮2、枸杞子3、生地黄2、山楂3、玉米须2、芹菜粉4、酸枣仁7、麸皮粉3、食盐2。
一种风味辣椒粉制备方法,包括以下步骤:
(1)将红辣椒、剁椒去蒂洗净,在100℃下漂烫1分钟,再用冰水冷却,沥干后切碎备用;
(2)将辣椒油送入锅中,文火烧热,加入花椒和上述切碎的红辣椒、剁椒,小火翻炒20分钟,冷冻干燥,研磨至100目细度,得到辣椒粉;
(3)将陈皮、辣椒叶、无花果等中药原料混合粉碎,加入6倍清水,文火煎煮40分钟,过滤,滤液喷雾干燥,得到中药粉;
(4)将酸枣仁与麸皮粉混合,文火炒至熟香,筛去麸皮粉,酸枣仁研磨成粉,过120目筛,得到枣仁粉;
(5)将上述辣椒粉、中药粉、枣仁粉与魔芋粉、芹菜粉、食盐混合均匀,灭菌包装即可。

1.一种风味辣椒粉,其特征在于是由下述重量份的原料制成:红辣椒50-60、剁椒20-24、花椒10-15、辣椒油18-20、魔芋粉4-5、陈皮2-3、辣椒叶1-2、无花果3-4、桑白皮1-2、枸杞子2-3、生地黄1-2、山楂2-3、玉米须1-2、芹菜粉3-4、酸枣仁6-7、麸皮粉2-3、食盐1-2。
2.一种如权利要求1所述的风味辣椒粉制备方法,其特征在于包括以下步骤:(1)将红辣椒、剁椒去蒂洗净,在90-100℃下漂烫1-2分钟,再用冰水冷却,沥干后切碎备用;(2)将辣椒油送入锅中,文火烧热,加入花椒和上述切碎的红辣椒、剁椒,小火翻炒15-20分钟,冷冻干燥,研磨至80-100目细度,得到辣椒粉;(3)将陈皮、辣椒叶、无花果、桑白皮、枸杞子、生地黄、山楂、玉米须混合粉碎,加入6-7倍清水,文火煎煮40-45分钟,过滤,滤液喷雾干燥,得到中药粉;(4)将酸枣仁与麸皮粉混合,文火炒至熟香,筛去麸皮粉,酸枣仁研磨成粉,过100-120目筛,得到枣仁粉;(5)将上述辣椒粉、中药粉、枣仁粉与魔芋粉、芹菜粉、食盐混合均匀,灭菌包装即可。
