Abstract

[0002] 我国是个渔业大国,随着淡水鱼产量的增加,淡水鱼的加工问题日渐受到人们的重视,鱼头中含有丰富的营养成分,它除了含有蛋白质、脂肪、钙、磷、铁和维生素BI等之夕卜,还含有丰富的卵磷脂,神经递质,它可使人增强记忆力、思维和分析能力,另外,日本营养学家曾对鱼头做过分析,认为鱼头还含有比其他任何食物丰富的多不饱和脂肪酸,对大脑的发育极为重要,所以常吃鱼头对健脑颇有益处,中老年人常吃鱼头还可延缓脑力衰退,鱼头的利用不仅可以为生产企业带来经济效益,还将对我国水产品市场的发展起到积极的促进作用。
发明内容
[0003] 本发明的目的在于提供一种健胃消食鱼头酱的制作方法。
[0004] 本发明采用如下技术方案:
健胃消食鱼头酱的制作方法,包括以下步骤:
(1)选择新鲜的鱼头,用水清洗,去鳃,再洗净,将鱼头放入冰箱中冰冻3-5h,然后取出解冻l_2h,再置于超声波处理装置中,开启超声发生装置,超声时间选择15-25min,超声处理频率为40KHz ;然后在0.15-0.25Mpa,120_130°C的条件下加热45_50min,取出鱼头,粉碎成鱼头泥,然后加入羊骨粉,羊骨粉的加入量为鱼头质量的5.0-8.0% ;
(2)称取向日葵花 盘1.5-2.5份、甘蓝3.0-5.0份、山药3.5-4.5份、木瓜5.0-7.0份、木耳5.0-6.0份、香菇8.0-10.0份、地黄花2.5-3.5份、砂仁4.0-5.0份、郁李仁1.0-2.5份、蒲公英3.5-4.5份、鸡内金0.8-1.2份、黄瓜藤7.0-9.0份、焦曲3.0-4.0份、山楂4.5-5.5份和茯苓2.0-3.5份;粉碎并混合均匀;待用;
(3)将30-35份燕麦粉、15-17份鲜牛奶和上述步骤(2)中待用中草药混合物混合均匀,然后向其中放入18-25份酸奶,于23-28°C下静置发酵10-15小时后,得发酵乳酸燕麦粉奶;
(4)在锅中加适量油,将切碎的辣椒、葱、姜以及步骤(I)中的鱼头泥和羊骨粉混合物加入锅中,炒熟20-30min,炒熟过程中加入7.0-8.0份食盐,15-17份酱油,甘薯粉5.0-7.0份和3.0-4.0份味精;然后加入步骤(3)得到的发酵乳酸燕麦粉奶和冻干粉并搅拌均匀,发酵乳酸燕麦粉奶与鱼头泥等比例加入,冻干粉加入量为鱼头泥质量的5-7% ;进行包装,杀菌,制成健胃消食鱼头酱。

具体实施方式
[0008] 实施例1:健胃消食鱼头酱的制作方法,包括以下步骤:
(1)选择新鲜的鱼头,用水清洗,去鳃,再洗净,将鱼头放入冰箱中冰冻4h,然后取出解冻1.5h,再置于超声波处理装置中,开启超声发生装置,超声时间选择20min,超声处理频率为40KHz ;然后在0.2Mpa,125°C的条件下加热45-50min,取出鱼头,粉碎成鱼头泥,然后加入羊骨粉,羊骨粉的加入量为鱼头质量的6.5% ;
(2)称取向日葵花盘2.0份、甘蓝4.0份、山药4.0份、木瓜6.0份、木耳5.5份、香菇
9.0份、地黄花3.0份、砂仁4.5份、郁李仁1.8份、蒲公英4.0份、鸡内金1.0份、黄瓜藤8.0份、焦曲3.5份、山楂5.0份和茯苓2.8份;粉碎并混合均匀;待用;
(3)将32份燕麦粉、16份鲜牛奶和上述步骤(2)中待用中草药混合物混合均匀,然后向其中放入20份酸奶,于25°C下静置发酵12小时后,得发酵乳酸燕麦粉奶;
(4)在锅中加适量油,将切碎的辣椒、葱、姜以及步骤(I)中的鱼头泥和羊骨粉混合物加入锅中,炒熟25min,炒熟过程中加入7.5份食盐,16份酱油,甘薯粉6.0份和3.5份味精;然后加入步骤(3)得到的发酵乳酸燕麦粉奶和冻干粉并搅拌均匀,发酵乳酸燕麦粉奶与鱼头泥等比例加入,冻干粉加入量为鱼头泥质量的5-7% ;进行包装,杀菌,制成健胃消食鱼头酱。

3.根据权利要求1所述的健胃消食鱼头酱的制作方法,其特征在于所述步骤(4)中的冻干粉为紫苏冻干粉 、银耳冻干粉、芦荟冻干粉和山药冻干粉。
