一种猪脑香辣酱
技术领域  本发明涉及一种猪脑香辣酱。 
背景技术  市场上辣酱很多,本发明是利用传统方法,制作出的家乡味浓的猪脑香辣酱,味道鲜香,口味独特。 
发明内容  本发明的目的是提供一种猪脑香辣酱。 
方案是:猪脑22-25kg、红尖辣椒8-9kg、干辣椒4-4.5kg、酱油2.5-2.8kg、黑芝麻2.5-2.6kg、花椒150-160g、小茴香220-230g、姜末400-420g、蒜泥250-300g、盐600-650g、味精290-300g、菜籽油11-12kg。 
制备方法:将猪脑蒸熟,研成泥,将菜籽油烧到六成熟,上述其它组份,入油锅爆香,将猪脑泥放入到炒好的料中,先干煸再慢熬,熬到辣椒干脆,基本没有水分为好,辣椒酥香渣脆,此时猪脑泥完全融入到了酱料中,冷却后分罐密封包装。

猪脑22-25kg、红尖辣椒8-9kg、干辣椒4-4.5kg、酱油2.5-2.8kg、黑芝麻2.5-2.6kg、花椒150-160g、小茴香220-230g、姜末400-420g、蒜泥250-300g、盐600-650g、味精290-300g、菜籽油11-12kg。

1.一种猪脑香辣酱,其特征在于包含以下组份:
猪脑22-25kg、红尖辣椒8-9kg、干辣椒4-4.5kg、酱油2.5-2.8kg、黑芝麻2.5-2.6kg、花椒150-160g、小茴香220-230g、姜末400-420g、蒜泥250-300g、盐600-650g、味精290-300g、菜籽油11-12kg。

猪脑22kg、红尖辣椒8kg、干辣椒4kg、酱油2.5kg、黑芝麻2.5kg、花椒150g、小茴香220g、姜末400g、蒜泥250g、盐600g、味精290g、菜籽油11kg。
