Claims (5)
- 一种白酒的生产方法,其特征在于:包括以下步骤:(1)、拌和、上甑:选取高粱粉碎,预蒸25-35分钟后加80-100℃热水润料,选取稻壳清蒸30分钟,将润料后的高粱、清蒸后的稻壳和中母糟进行拌和,加入上甑锅内进行上甑、蒸酒;高粱和母糟的重量比为1∶4-6,稻壳和高粱的的重量比为20-30%∶1;蒸酒得到酒收集,然后向锅内粮糟加闷浆水,3-5分钟后,缓慢开汽蒸粮,蒸粮时间为20-30分钟;蒸粮结束后,粮糟出甑摊在地下通风帘上进行鼓风降温,打入50-60℃的热水进行打量水,然后将打量水后的粮糟进行摊凉,然后拌入高温酒曲,进行堆积,堆积起始温度为26-33℃,堆积高度45-55cm,在堆积温度达到40-50℃后,加入低温酒曲;(2)、将面糟加糠拌和均匀,然后上甑进行蒸酒,蒸酒结束后,出甑、丢糟,蒸酒得到酒收集;(3)、将底母糟和清蒸后的稻壳进行拌合,然后上甑进行蒸酒,蒸酒结束后,蒸酒得到酒收集,粮糟出甑、摊凉、拌低温酒曲;(4)、将步骤1和步骤2、3量质摘得的酒进行分档储陈勾调,包装,得本白酒;(5)、步骤1拌低温酒曲后的粮糟适温入窖进行封窖发酵,入窖温度:粮糟为23℃-32℃、回糟为28℃-40℃,入窖酸度为1.2-1.8;将步骤3拌过低温酒曲的回糟加入本窖内上层一起进行发酵,发酵结束后,出窖,得母糟;所述的中母糟、面糟、底母糟均来自出窖后的母糟。
- 2. 根据权利要求l所述的白酒的生产方法,其特征在于:所述的高粱的杂质含量l. 5% 以下,水分《15%,淀粉含量> 62%,破碎粒度4-8瓣,过40目筛细粉《15%。
- 3. 根据权利要求1所述的白酒的生产方法,其特征在于:所述的润料后的高粱、清蒸 后的稻壳和中母糟进行拌和后,淀粉含量控制在:夏季14-16%,冬季17-20% ;所述的中 母糟拌和前把堆糟刮平、撒上粮粉,随即拌和两次,要求拌散、和匀消灭疙瘩,然后撒上稻壳,将母糟盖好,上甑前10-15分钟进行第二次拌和,把稻壳拌匀,堆圆,拍光,准备上甑;所述的上甑前要将上甑锅底冲洗干净,堵好放水口 ,加入底锅水和尾酒,撒上一层稻壳,再撒 上一层酒醅,然后缓慢开汽,见汽后继续上甑,要求轻撒匀铺,不压汽,不跑汽,汽压控制在0. 1-0. 15MPa,上满后将锅边稍稍压紧,将糟刮平,盖上云盖。
- 4. 根据权利要求1所述的白酒的生产方法,其特征在于:所述的蒸酒得到酒收集接酒 时应截去酒头0. 5-1. 5kg,然后量质接酒,接酒汽压控制在0. 01-0. 03MPa,流酒速度控制在 2. 5-3. 5kg/min,火力均匀,适温流酒,流酒温度控制在25_35°C ;所述的出甑粮糟的含水量 为45-55 % ,打量水后,入窖粮糟的含水量应控制水分夏季56-58 % 、春、冬季53-55 % 。
- 5. 根据权利要求1所述的白酒的生产方法,其特征在于:所述的封窖发酵是装完面糟 后,将已踩熟的池头泥盖至面糟上,刮平、抹光,厚5-10厘米,24小时后盖塑料布,以后每隔 23-25小时清窖一次,直到泥表面不粘手,立即用塑料布盖上,已防窖面干裂,用沙土压边踩 紧,注意踩池,不得有翻边及裂缝。
