- 一种海参精华西式火腿,包括海参、畜禽肉和调味辅料,其特征在于:海参的重量百分数为2-20%,畜禽肉的重量百分数为30-85%,调味辅料的重量百分数为5-20%,其余为水。
- 2. 根据权利要求1所述的海参精华西式火腿,其特征在于:所述海参为梅花参、剌参、乌参、光参、瓜参中的一种或多种。
- 3. 根据权利要求1或2所述的海参精华西式火腿,其特征在于:所述海参加工形状为块、丁、条、颗粒、片中的一种或多种。
- 4. 根据权利要求1所述的海参精华西式火腿,其特征在于:所述畜禽肉为猪肉、牛肉、羊肉、鸡肉、鸭肉、驴肉、马肉、兔肉中的一种或多种。
- 5. 根据权利要求1所述的海参精华西式火腿,其特征在于:所述调味辅料包括常规食用调味品和食用辅料,所述食用调味品包括食盐、糖、味精、香精、料酒、酱油、姜、葱、蒜、香辛料中的一种或多种;所述食用辅料包括淀粉、大豆蛋白、海藻、蔬菜、水果、复合磷酸盐、卡拉胶、褐藻酸钠、琼胶、魔芋胶、CMC、葡萄糖酸钙、柠檬酸钙中的一种或多种。
- 6. —种权利要求1所述的海参西式火腿的制备方法,其特征是制备时,采用权利要求1所述海参、畜禽肉和辅料的重量百分数,取畜禽肉,绞肉,用水溶解辅料,将绞好的畜禽肉和水溶解后的辅料,以及水与海参加入滚揉机,进行滚揉,灌装,热加工,冷却包装,二次杀菌,过金探,得成品。
- 7. 根据权利要求6所述的方法,其特征在于滚揉时间为15〜25分钟,停8〜12分钟,总滚揉时间为100〜140分钟。
