<B>Bratpfanne</B> Bratpfannen, auch Tiegel genannt, be stehen in an sieh bekannter Weise aus einem Boden, einem diesen Boden umgebenden Rand und einem am Rand befestigten Stiel. Vor zugsweise sind die Bratpfannen kreisrund ausgebildet und weisen einen mit einer Riffe lung versehenen Boden auf, der das Anbren nen des Bratgutes erschwert. Solche Pfannen werden im allgemeinen aus Stahl hergestellt, sie können auch mit einem Emailleüberzug ersehen sein.
1:s ist bekannt, dass beim Braten, beispiels weise von Fleischstücken in Bratpfannen, das Fleischstück sich infolge der Wärmeeinwir kung verzieht und sich über dem Boden der Bratpfanne hochwölbt. Dadurch wird eine gleichmässige Wärmeübertragung auf das Fleiselistiick verhindert und die Bratdauer verlängert, wodurch die Qualität des gebra tenen Stückes beeinträchtigt wird, insbeson dere, weil bei längerem Braten eine starke Verdunstung der Aromastoffe erfolgt. Ausser dem erhält das Bratstück ein unschönes Aus sehen.
Zur Vermeidung dieser Nachteile wird ge mäss der Erfindung eine zusätzliche Einrich tung zur Bratpfanne vorgesehen. Diese be steht aus einer einsetzbaren Siebplatte, die am Rand der Bratpfannei derart lösbar an gelenkt ist, dass sie mittels eines der An lenkung gegenüber angeordneten, über den Rand der Bratpfanne reichenden Handgriffes in eine parallele oder annähernd parallele Lage zum Boden der Bratpfanne gebracht werden kann.
Die Siebplatte ist zweckmässig hinsicht lich ihres Umfanges dem Boden der Brat pfanne angepasst und kann beispielsweise aus einem kreisrunden Drahtrahmen bestehen, an dem rechtwinklig zueinander stehende, unter einander verflochtene, ein im wesentlichen ebenes Drahtgeflecht bildende Drähte ange schweisst sind. Ferner kann die Ausbildung der Siebplatte so getroffen sein, dass de! Drahtrahmen in einen Handgriff ausläuft, der durch eine Drahtschlaufe gebildet wird, die im wesentlichen aus zwei parallel zuein ander verlaufenden Drähten besteht.
Eine solche Ausbildung der Bratpfanne und der Siebplatte ermöglicht es, beispiels- vs eise ein Fleischstück, das auf den Boden der Bratpfanne Beilegt wird, von oben mittels der Siebplatte flach an den Boden der Brat pfanne anzudrücken.
Die Anordnung und Ausbildung der Sieb platte und der Anlenkung erfolgt zweckmässig so, dass am Rande der Siebplatte eine nach oben gerichtete Stütze vorgesehen ist, die in eine am Rande der Bratpfanne vorgesehene Gegenstütze derart lösbar und beweglich ein greift, dass die Siebplatte nach oben abge stützt ist.
Vorzugsweise ist die Gegenstütze an der dem Stiel der Bratpfanne diametral gegen- überliegenden Stelle der Bratpfanne angeord riet, so dass der Handgriff der Siebplatte über den Stiel der Bratpfanne greift. Auf diese Weise ist es möglich, den Stiel der Bratpfanne und den Handgriff der Siebplatte mit einer Hand zu umfassen. Damit der Handgriff der Siebplatte nicht dauernd von Hand nach unten gedrückt werden muss, ist zweckmässig am Stiel der Bratpfanne eine schwenkbare Öse aus Draht oder dergleichen angeordnet, die über das Ende des Handgriffes der Siebplatte geschwenkt. werden kann.
Einzelne Ausführungsbeispiele des Gegen standes der Erfindung sind nachstehend er läutert und auf der beigefügten Zeichnung dargestellt. Bei der Ausführungsform gemäss Fig.1 bis 3 ist die Bratpfanne mit 1 und der an ihr befestigte Stiel mit 2 bezeichnet. Die Sieb platte 3 besteht aus dem Drahtring 4 und dem Drahtgeflecht 5 und dem Handgriff 6. An dem durch den Drahtring 4 gebildeten Rand der Siebplatte 3 ist ein nach oben ge richteter Bügel 7 aus Draht oder dergleichen vorgesehen, der einen parallel zur Ebene der Siebplatte verlaufenden Steg 7' aufweist, der unter eine an der Innenseite des Randes 1' der Bratpfanne 1 vorgesehene, nach unten offene Nase 8 greift. Diese kann beispielsweise durch ein Blechstück gebildet sein, das am Rand 1' der Bratpfanne 1 angeschweisst ist.
Zweckmässig ist der Steg 7' an seinen Enden 7" nach oben abgekröpft, und sein gerader, zwischen den Abkröpfungen 7" ver laufender Teil weist mindestens die Länge der Nase 8 auf. Dadurch wird erreicht, dass der Bügel 7 nicht seitlich aus der Nase 8 heraus rutschen kann.
Bei der Ausführungsform gemäss Fig.4 und 5 sind am Rand 14 der Siebplatte 13 zwei nach oben gerichtete Stifte 17 befestigt, die an ihren Enden etwa parallel zur Ebene der Siebplatte 13 abgebogen sind. Die abge bogenen Teile 17' können in zugeordnete, am Rande 11' der Bratpfanne 11 vorgesehene l.öeher 18 eingreifen. Damit die Stifte 17 nicht aus den Löchern von selbst herausrut schen, ist es zweckmässig, wenn die abge bogenen Teile 17' der Stifte 17 an den Enden 1.7" nochmals nach oben abgebogen sind.
Es ist natürlich auch möglich, dass die Siebplatte 13 nur einen Stift 17 und der Rand 11' der Bratpfanne 11 nur ein Loch 18 auf weist.
Die in den Fig. 4 und 5 nicht dargestellten Teile der Bratpfanne und der Siebplatte sind ebenso ausgebildet wie die Ausführungsformen gemäss den andern Figuren.
Bei der Ausführungsform gemäss Fig.6 bis 8 ist am Rand 104 der Siebplatte 103 ein nach oben gerichteter, über den Rand 101' der Bratpfanne 101 nach aussen und unten abgebogener Bügel 107 aus Draht oder der gleichen vorgesehen, der an seinem äussersten Ende einen parallel zur Ebene der Siebplatte 103 verlaufenden Steg 107' aufweist, der unter eine an der Aussenseite des Randes 101' der Bratpfanne 101 vorgesehene, nach unten offene Nase 108 greift. Diese Nase kann eben falls aus einem Blechstück gebildet und an den Rand 101' der Bratpfanne 101 ange schweisst sein.
Die Gegenstützen 8 bzw. 18 bzw. 108 sind an der Bratpfanne an der dem Stiel diametral gegenüberliegenden Stelle angeordnet, so dass der Handgriff der Siebplatte über den Stiel der Bratpfanne greift. Aus den Fig. 1 und 3 ist ersichtlich, dass die Gegenstütze, nämlich die Nase 8, diametral gegenüber dem Stiel 2 der Bratpfanne 1 angeordnet ist, so dass der Handgriff 6 der Siebplatte 3 über den Stiel der Bratpfanne greift.
Aus den Fig. 6 und 8 ist ersichtlich, dass die Gegenstütze, nämlich die Nase 108, diame tral gegenüber dem Stiel 102 der Bratpfanne 101 angeordnet. ist, so dass der Handgriff 106 der Siebplatte 103 über den Stiel 102 der Bratpfanne 101 greift.
Bei der Ausführungsfortn gemäss Fig. 4 und 5 ist die Anordnung entsprechend ge troffen, jedoch in der Zeichnung nicht dar gestellt.
In den Fig. 6 und 8 ist ferner dargestellt, dass am Stiel 102 der Bratpfanne 101 eine schwenkbare Öse 119 aus Draht oder derglei- ehen angeordnet. ist, die mit. ihren abgebogenen Finden in einer Bohrung 120 des Griffes 102 sitzen kann. Diese Öse 119 ist so angeordnet, dass sie über das Ende des Handgriffes 106 der Siebplatte 103 geschwenkt werden kann. Diese Öse 119 ist selbstverständlich zweck mässig auch bei den Ausführungsformen ge mäss Fig. 1 bis 5 vorgesehen.
Durch die Anordnung der Siebplatte ge mäss der Erfindung kann, wie schon erwähnt, das Bratstück flach auf den Pfannenboden gedrückt werden, so dass eine gleichmässige ärmeübertragling vom Pfannenboden auf das Bratstück stattfindet, wobei die Brat dämpfe ungehindert durch die Siebplatte ent weichen können.
Die Bratpfanne mit der Siebplatte kann auch zum Toasten von Brot verwendet wer den. Ferner ist es möglich, die Bratpfanne mit dem Siebboden auch zum Dämpfen zu benutzen. In diesem Falle wird das zu dämp fende Gut 9, wie in Fig. 3 beispielsweise dar gestellt, auf den Siebboden 3 gelegt und ge gebenenfalls die Bratpfanne 1 mit einer Haube <B>10</B> überdeckt. Die unter der Siebplatte 3 befindliche Flüssigkeit verdampft durch die \Iasehen der Siebplatte 3 hindurch, so dass der Dampf das zu dämpfende Gut 9 einhüllt.
Zur Benutzung der Bratpfanne mit Sieb platte zum Dämpfen eignen sich alle darge- stellten und beschriebenen Ausführungsfor men, insbesondere aber die Ausführungsform gemäss Fig.1 bis 3, weil bei dieser Ausfüh rungsform weder der Rand der Pfanne durch brochen ist noch Stützteile der Siebplatte über den Rand der Bratpfanne hinwegreichen, so dass auch eine Durchbrechung des Randes der Haube 10 nicht erforderlich ist. Dadurch kann der Dampf nicht aus der abgedeckten Brat pfanne entweichen.
Damit der Handgriff 6 nach aussen tre ten kann, jedoch trotzdem eine möglichst kleine Verbindung des Dampfraumes mit der Aussenluft entsteht, ist der Handgriff 6 durch einen bzw. bei der dargestellten Drahtaus führung des Handgriffes 6 durch zwei Schlitze 1" des Pfannenrandes 1' herausgeführt, die von dem Zentrierrand 10' der Haube 10 weit gehend abgedeckt werden.
