resumo processo para produzir produtos de fermentação a partir de tecido de parênquima de planta rico em carboidrato trata-se de um método para fermentar culturas agrícolas ricas em carboidrato. a beterraba sacarina, cana-de-açúcar, sorgo doce, híbridos de milho tropical e frutas são ricos em açúcares simples; batata, batata doce, mandioca e inhame são ricos em amido; e alcachofra- girassol é rica em inulina. esse método usa a infusão a vácuo para infundir a levedura no espaço intercelular (apoplasto) do tecido de parênquima. os açúcares simples se difundem no apoplasto, entram em contato com a levedura e produzem etanol. o etanol pode ser extraído da cultura agrícola através de separação a vácuo ou trituração ou pode ser deixado dentro da cultura agrícola de amido para preservar o mesmo. em algumas variantes, as enzimas pectinase degradam as paredes celulares do parênquima para acelerar a difusão de açúcares simples na levedura, acelerar a difusão de amilase nos grânulos de amido ou acelerar a difusão de inulinase na inulina insolúvel. 1/1
