Abstract

Werkwijze voor het vormen van voorgegaarde aardappelstukken, zoals voorgegaarde aardappelfrieten, waarbij deze werkwijze de volgende stappen omvat • het voorzien van stukken rauwe aardappel; • een blancheerstap, waarbij de genoemde stukken geblancheerd worden in water voor minstens 3 minuten, waarbij de temperatuur van het water gelegen is tussen 65°C en 95°C; • een stoomstap, waarbij de stukken gestoomd worden bij een temperatuur gelegen tussen 80°C en 100°C en dit voor minstens 3 minuten, waarbij de stoomstap plaatsvindt na de blancheerstap.
