Abstract
Mezcla seca en forma particulada que contiene un agente liberador de gas que está cubierto, al menos parcialmente, con un compuesto lipófilo y/o un compuesto anfifílico, y un componente de sabor, para la preparación de un producto alimenticio aireado. Al mezclar la mezcla seca con agua, se liberan burbujas de gas en la fase acuosa. Estas mezclas secas se pueden usar para la preparación de bebidas o productos alimenticios líquidos. Reivindicación 1: Una composición en forma de una mezcla seca en forma particulada para la preparación de un producto alimenticio aireado que contiene burbujas de gas dispersas en una fase continua; dicha mezcla seca en forma particulada que comprende lo siguiente: un componente de sabor instantáneo en forma particulada; un hidrocoloide en forma particulada, caracterizado porque el hidrocoloide provee un limite de elasticidad aparente de al menos 0,3 Pa dentro de un período de 30 segundos después de mezclar con agua para reconstituir el hidrocoloide, en donde el hidrocoloide comprende goma xantana; un agente liberador de gas soluble en agua o dispersable en agua en forma particulada, que contiene huecos en donde el gas presurizado queda atrapado, y que libera burbujas de gas ante la reconstitución en agua; en el cual, el agente liberador de gas está cubierto al menos parcialmente, con un compuesto lipófilo y/o un compuesto anfifílico que tiene un valor HLB de al menos 8. Reivindicación 10: Un producto alimenticio preparado por el método de acuerdo con la reivindicación 10 u 11, caracterizado porque el producto alimenticio se selecciona entre el grupo que consiste en lo siguiente: sopas, caldos, salsas, jugos de carnes o verduras, y/o condimentos; otros productos alimenticios salados; té y bebidas a base de té, que contienen un extracto de la planta Camellia sinensis; infusiones herbales, que contienen, con preferencia, un extracto seleccionado entre menta, camomila, rooibos, rosa mosqueta, hibisco, frambuesa, o cualquiera de sus combinaciones; helados y/o postres y/o batidos, destinados a servirse a una temperatura inferior a 0ºC; bebidas a base de soja que, en forma reconstituida, contienen al menos 0,3% en peso de ingredientes derivados de soja, en donde los ingredientes comprenden una proteína de soja; aderezos; y productos untables.Dry particulate mixture containing a gas releasing agent that is covered, at least partially, with a lipophilic compound and / or an amphiphilic compound, and a flavor component, for the preparation of an aerated food product. Claim 10: A food product prepared by the method according to claim 10 or 11, characterized in that the food product is selected from the group consisting of the following: soups, broths, sauces, meat or vegetable juices, and / or condiments; other salty food products; tea and tea-based beverages, which contain an extract of the Camellia sinensis plant; herbal infusions, which preferably contain an extract selected from mint, chamomile, rooibos, rosehip, hibiscus, raspberry, or any combination thereof; ice cream and / or desserts and / or milkshakes, intended to be served at a temperature below 0ºC; soy-based beverages which, in reconstituted form, contain at least 0.3% by weight of soy-derived ingredients, wherein the ingredients comprise a soy protein; dressings; and spreadable products.
