Abstract
Un tipo de composiciones de proteínas del suero desnaturalizadas con un contenido bajo de proteínas del suero solubles y un alto contenido de proteínas y un método para su producción. En particular, la presente se refiere a un tipo de composiciones de proteínas del suero desnaturalizadas con un contenido bajo de proteínas del suero solubles, un contenido alto de proteínas y un contenido bajo de grasas; y un método para su producción. Además la presente también se refiere a productos que contienen dichas composiciones de proteínas del suero desnaturalizadas, de alto contenido proteico, en particular productos lácteos acidificados, de alto contenido proteico y usos adicionales de las mismas. Reivindicación 1: Un producto lácteo acidificado, de alto contenido proteico, que contiene: una cantidad total de proteínas de por lo menos un 7% (p/p), y los sólidos de una composición de proteínas del suero desnaturalizadas en una cantidad de por lo menos un 2% (p/p), una cantidad total de grasas de como máximo 0,3 (p/p), en donde la composición de proteínas del suero desnaturalizadas contiene: una cantidad total de proteínas de por lo menos un 60% (p/p) basado en el peso seco, una cantidad total de grasas de como máximo un 3% (p/p) basado en el peso seco y partículas de proteínas del suero insolubles que tienen un tamaño de partícula en el rango de 1 - 10 mm, donde la cantidad de dichas partículas de proteínas del suero insolubles se encuentra en el rango de 50 - 100% (p/p) con relación a la cantidad total de proteínas.
