Abstract

Un proceso para preparar un concentrado de proteína vegetal a partir de material vegetal oleaginoso, que comprende las etapas de: a) pre-tratar el material vegetal oleaginoso para abrir las células; b) extraer el material vegetal pre-tratado en un primer extractor con un solvente apolar, para producir un material humedo con solvente, desgrasado; c) poner en contacto el material vegetal desgrasado con etanol acuoso con una concentracion de etanol de al menos 80% en peso para producir un material vegetal desgrasado, humedo con etanol; d) humidificar con etanol acuoso el material vegetal desgrasado, humedo con etanol; e) extraer el material vegetal en un ultimo extractor para producir un material proteináceo humedo con solvente; f) desolventizar dicho material proteináceo humedo con solvente para producir un concentrado de proteína vegetal.
